This episode highlights why I laugh every time someone bashes New Orleans cuisine for being one dimensional and lacking variety. A world-class, wealthy chef of nationally renowned places drives across the river to go eat and highlight a pho restaurant.

Same here, but that applies to almost every bar in NOLA for me... I tend to think the person in the polo (as one example) is more self conscience than other people are actually giving a shite of what they have on...

Pho Tau Bay has some really good dishes, but their pho is quite poorly made. Very bland compared to other places in Nola metro. The bo kho is excellent there.

I like Pho Tau Bay, but the amount of love it gets from chefs is astounding. Its good, but places like Magasin are a LOT better.

I thought it was funny when he(Bourdain)said he was pulling for the Saints to go to the Super Bowl. I wonder how the New Yorkers feel about that.

I guess everyone has their own opinions and experiences and I cant argue... I tend to see the facial expressions going the other direction..
I just go with it and don't judge... my friends are a mix of Brooks Brother wearing lawyers to sleeved (tattoo) blue collar workers and in between... Thats what Ive always loved about NOLA and the neighborhood bars... Much less segregated than places like, BR...

Magasin certainly has it's high points. I think the spicy shrimp pho at Lilly's is the best I've had.

Make no mistake, I am standard polo-wearing former LSU frat bro. I think a lot of it is comfort level. Being from there and being surrounded by people I trust my life with makes me give zero fricks, whereas if I go to a bar in Houston and I'm with a couple of people I've known for a few months and in a new environment, I might be more inclined to feel like people are judging me. I've been here long enough for that to pretty much not be the case though. Truth be told I generally think of myself as spectacularly unspectacular so I don't ever think anyone is looking at me, hipster or what have you.

Who knows what she meant. She's younger (25 I think?) and really into the indie music scene. I think she equates living near "artists," poor people and minorities with surrounding yourself with "culture" while people who live Uptown/Garden District/WHD are inherently boring and vanilla.

I agree with that. And I've experienced that plenty of places. It's mostly these younger hipster fricks, usually people not from New Orleans originally, who get pissed off by squares "being in the know" as far as their hip hangouts are concerned.
