What is one item you think every Italian restaurant should always have

My wife would say Chicken Parmesean, since she pretty much gets it every time we go.

Osso Bucco with Rissoto and if it doesn't have it on the menu they are PRETENDERS!

App: A nice selection of antipasto/salumi
Entree: Osso Bucco
Dessert: Zabaglione or Panna Cotta

Good, fresh made, hot real Italian bread.
Good and authentic Italian salad. The real deal.
Beef and spinach canneloni with red, white or pink sauce.
If you're going to have a sweet red gravy, you better have a savory one, too. HOMEMADE.
Homemade tiramisu.
Zero fried pasta stuff.
Servers with Italian accents who can sing Happy Birthday operatically.

St Louis is the home of that dish for sure, I lived there for a few years and never had the urge to try it at all.
