I use the plate setter on occasion, but if I'm cooking low and slow I don't really feel like I need to. Smoked plenty without it.

I started w/ the map and it ran out relatively quickly. I had the propane containers already and they've lasted and lasted. I couldn't tell any real difference in temps, but like you say...to each. a good system, beats the firestarter blocks and the electric starter i first tried.

I've been seeing that a lot. Do you use a drip pan? I see some people say a pan with an inch and a half of water is all you need and it deflects the heat fine.
I am about to order the cast iron plate setter, I already ordered the ash scraper and the grate pick up tool. May get the SS cap next as it rains a lot and I may have to use it in the rain.
I was going to start today but am too busy to Q until Wednesday. I'm going to smoke a but Wednesday and then grill some burgers, chicken and oysters as well as bacon wrapped asparagus for New years eve.

I have a Weber fire chimney starter thingy and my way has always been to load it with charcoal, then put it on the burner on the side of the gas grill and use that to get it going. Doesn't seem to use that much propane.
I have also used paper to light it that way. When grilling I'm never in a real rush, but I have access to torches and am sure I will use them sometimes.

I would not use a chimney. It starts too many coals and gets the temp to high. The one thing you don't want to do with ceramics is overshoot your target temp. They are so efficient that it is hard to bring the temp down. I hope this helps.

Correct. Much easier to reach your desired temp starting slow

Agreed. Keep the char griller. Never throw out a good grill unless it has burned through and will only be picked up by the scrappers.

It's gas on one side and charcoal on the other (a two in one grill) the gas side had a major hole in it, so I cut it out and then riveted in a sheet of stainless steel rescued from an old dishwasher. It's seen better days, but functions.
I have these extra thermidor burners with electric ignition, I keep toying with building my own gas grill. I just need to get a little better at welding. Braising and soldering I can do like a pro, when I weld I burn stuff.

I was looking on Amazon at the charcoal, I know a guy who swears by the Coconut husk charcoal, but that stuff is too expensive. It doesn't add flavor though, so you could then use the woods you want for flavor without the charcoal flavor as well.
IDK. I got two bags of the BGE charcoal, still haven't lit it yet. Picking up a butt and some oysters at restaurant depot tomorrow. Going to start the butt tomorrow night and then grill the oysters as one of my sides for Thursday night.

I think royal oak makes BGE charcoal. I just prefer B&B because it seams like bigger chunks to me.

Just used the plate setter, I smoked squash and eggplant. It came out excellent, I usually hate squash.
My sister (a Vegan) challenged me to go a week Vegitarian so I am doing it. I actually enjoy the meals I have been making. Trying to lose some weight, though Saturday (it makes the week) I'm grilling three types of fish and going back to being a carnivore. (though just chicken and fish for now.)
I like how easy it is to get this grill going, and then shut it off when done.
It makes me want to use it all the time.
