Personally I like Chef Folse.. I grew up watching him cook on TV and it has gone a long way towards my love for cooking today.
That said his frozen gumbo is not very good. I prefer the richards or savoies frozen gumbo. However I have noticed that none are what they were only 4 years ago.. Must be cutbacks somewhere they all stopped using decent chicken meat and use too much of the crappy fat and tendon parts of the chicken that you normally throw away and the amount of sausage has been cut back as well. But if you want to add your own I find the gumbo is fine for those two brands just not enough meat.

Catman, quite some time ago, someone actually served me the Savioe's frozen gumbo. You're right about the amount of meats, but the flavor was acceptable and I recall being surprised by that. My niece bought one other frozen entree by Savoie's, but I can't recall what it was. I remember tasting it and finding it surprisingly acceptable in flavor, as well. That was a very long time ago.

I've met John Folse many times, done business with him, had dinner with him and enjoy his company and friendship. I love many of his products and do appreciate his being an ambassador for Louisiana and it's food and culture. That said, his frozen soups and gumbo's leave much to be desired and to be honest I've told him so. Many other products he puts forth are well done and maybe his problem is the latter are what really started his retail sales operation and it is time to refocus back on them and improve them on order to go forward. Maybe he spreads himself to thin over too many product lines. He's in line with most other local frozen soups and gumbos Savoies included. If I need to buy some that I don't want to make I try to get Don's Seafood's. Or I just stick to Campbell's Chicken Noodle until I can make my own.
And I'll say this-his accent is always the same and I've been around him over 20 years. He's a businessman and a self promoter, which he has to be in order to get his products out, and inevitably some people won't like him because of that very virtue. It's a double edged sword and he's aware of it. So what. I buy his olive oil, cheese and when I can find it, his gelatto but I won't buy his frozen food.

Ok I will chime in... I am not a biog Folse fan, but I do acknowledge what he has done.
I have only once tasted his frozen soup..corn and shrimp bisque. It was OK.. nothing special but still ediable.
It has been at least 5 years ago, so maybe today they are worse I don't know.
But still it was a commercial frozen soup.
And marketed as such so it has to be afforadable compared to simular product or it won't make it..
Therefore I am sure he skimps on the seafood where he can. In the same way others do..
If anyone thinks Folse's frozen soups are the same as what he serves in his resturant, you must be crazy..
I will also add a while back I found a market down basket at winn-dixie which had some Wolfgang Puck can clam chowder.. I bought one can for less than $1.
I could not eat it... awful....
So I guess I can say the same about Wolfgang.

The one time ive eaten something that john folse catered, I really liked it. with that said, my date who ate the same meal... said that i cook a steak at least as good. so, john folse must be a good cook if his steak is compared to mine
