I had the Tonkotsu Spicy, medium heat level. The broth could have used a little more zang. Next time I go, I'll get the hottest. The noodles were excellent. They were a little light on the pork, but it was tasty. The service was kind of slow, I waited a long time for them to take my order, get my ramen and get my change. It was lunchtime and fairly crowded. They had a ton of people making ramen, it was just slow getting out. Maybe there are a lot of steps. It's a nice space and the food is better than Chow Yum Phat. I'd give it a 7/10.

Get the hottest. Should bring that rating up to 8.5

Soo good And tasty!!!
But really, first time having ramen and it is way better than Pho.
Their potstickers are some of the best I’ve ever had!
Highly recommend trying this place out.

Went on Friday and loved it! Got some hot sake, a pork bun, and the Tonkotsu Red ramen. Food was great overall, but they didn't ask me about my spice level (which it sounds like they're supposed to do). They had a jar of chili paste on the table though so I was able to kick it up myself.

Realized after taking photo and eating the pork bun that you can't really see the pork - but it was delicious.

My only problem was the service... I was waiting to eat with a friend and they arrived about 10 minutes after I did. I was in the outdoor seating and there was plenty of room, but they kept asking me if I was ready to order despite me telling them multiple times I was going to wait until he arrived. It was like they were trying to rush me out, but the place wasn't busy at all

I went back, got the hottest level and added an egg and roasted Brussel sprouts. It came in at around an 8.5. Might even be better than the Hangover ramen at Umami. Those noodles are mighty fine.

Did they seem like Japanese transplants?

If so, it's simply the culture. They aren't trying to push you out; your sitting there with nothing in front of you was likely driving them insane.

Didn't seem like transplants to me, but I may have just not known better. I'd at least ordered the sake at that point so I just wanted to drink that in peace for a few minutes
