I was reading JKs FB Post this morning and I believed they were going to start brewing BMS again. But when I got to the part about turning the entire brewery into a BMS operation I....April Fool'd Myself.

It's funny because the only JK beer that I really enjoyed was Black Metal. They do a lot of sours and I don't care for those that much. Then the rest seem to be farmhouse ale's, which I'm not too thrilled about. If I'm going to pay over $10 for a bomber, I expect it to be pretty damn good.

They do some very good beers for the style they aim for IMO. Understandable if it isn't your preferred style of beer, but they do a good job.

BTW: I never see you on here, but I pimp the hell out of your Asian Brussels Sprouts recipe.

Not meaning to hijack, but I've heard that you can add bacon and it is awesome. Not sure if it'd be better to cook beforehand and add or to let the brussels fry in the bacon fat in the oven.

JK's black metal stout is possibly one of my favorite beers of all time. I emailed them a couple years ago and they shot me over the brewhouse recipe they use to make a batch. It did say it called for a french style saison yeast. Now it's been a couple years since i've had it, but i never noticed the french saison profile, that are very noticeable to many saisons with that yeast. Do we know when JK went from english ale to french saison yeast? I want to brew a clone of black metal this year with their recipe. I may have to do a split batch. 1/2 english ale yeast, 1/2 french saison yeast.

This is the original BMS recipe. Its a higher abv and used WL007 Eglish Ale yeast.

The recipe i have is for a 30 barrel system, but here are the proportions

Brew Date 2/5/2013

OG 1.085
FG 1.015
9.3% ABV
50 IBU
75 SRM

Malt = 2915 lbs

77% Organic Pale Malt
6% Simpsons Roasted Barley
4% Simpsons chocolate malt
4% Simpsons black malt
2% Simpsons caramalt
2% SImpsons dark crystal
2% Crisp Brown Malt
2% Carafa III Special


Hops
46 IBU's - Millenium @ 60 minutes
4 IBU's - EKG @ whirlpool

Looks like the only difference is the dextrose

Yea....kind of a lot. But I have used 1.5 lbs in an IPA before to really dry it out. And I would put it in at end of boil rather than 4 days into ferm.

Depends on how anal you wanna be about Maris Otter vs. Pale Malt. There is a difference but its pretty subtle but MO is maltier and has a biscuit taste too. I don't like it at all in IPAs but it works well in Stouts and Porters. And the IBU's are 20% higher in the recipe I posted.
