For the adventurous, I have made Kudzu, Rose, Wysteria, clover, goldenrod and privet jelly.

My thoughts:

kudzu- mild grape
Rose-mild floral
Wysteria-honey and white wine
Clover-strong honey
Privet-strong floral
Goldenrod-floral, mild honey

If you can get ahold of some prickly pear try making jelly with it. An older lady used to make some for me every year. I think you'll like it.

I have a prickly pear and plum tree that I also make jelly with. The PP is good and has a very distinct color. You can distill its juice to a product reminiscent of tequila, so I’ve heard.

I hate blackberries but for some reason I love blackberry jelly on a biscuit. Very weird but there's my vote lol

Agreed. Flies under the radar, but very solid.

Muscadine is sublime. Plum is excellent.

Figs, if done properly, are my top tier preserve.

I LOVE fresh figs and have several varieties (hence the username), but for some reason I don’t really make or seek out fig jam or preserves. I just eat them straight off the tree until I get sick, ha!

I will eat figs any way I can get them. Fresh off the tree may indeed be best, though.

I get what you’re saying—I love a fresh blackberry, but blackberry jelly/jam/preserves, meh.

Mayhaw and muscadine.

I recently bought some Mayhaw butter (similar to apple butter) in Cherokee NC that was great

Probably a farmers market. Can't say I have seen muscadine, but I have not been looking for it.

same. I’ve got two massive (school bus sized) Celestes and fresh eating is pretty much what we do. We used to can figs but not so much anymore. We got a freeze dryer last year and that is far and away the best way to put them up, they last forever that way and it’s a one step process. When I want figs on a biscuit I just reconstitute in hot water and mash with a fork
