Jambalaya Rules?

Am I allowed to use both sausage and shrimp in the same jambalaya? I'm all out of chicken and I don't have enough sausage for that to be the sole protein, but I do have some frozen shrimp.

Only danger is of over cooking the shrimp.

Jambalaya is smoked sausage and a meat. Subbing shrimp for the meat is fine. Just not much flavor from shrimp.

I've made shrimp and sausage jambalaya many times. You'll be fine.

You’re better off with just shrimp, no sausage, and make a pot of white beans as a side.
The down the bayou way.

Make it and try it to see if you like it. What do you have to lose? I’ve made a lot of things just off a whim, and came out with some pretty good meals.

I used crawfish in a jambalaya once and it was inedible. So I thought Id check with y'all first.
The shrimp was great. It was after I created this thread that I saw the box already had shrimp listed as something good to add.

How does one cook shrimp in a jambalaya without over-cooking it? It seems like if you subbed shrimp for pork butt and let it simmer in a covered dutch oven for nearly 30 min, then it wouldn't turn out too great?
So, do you just use a shrimp / seafood stock and:
- Add the shrimp at the end after all the rice is cooked and let it cook for a few min in the rice?
- Blacken the shrimp in the dutch oven, remove, then add it back after rice is cooked?

I’ve literally never heard that you weren’t.

Shrimp and sausage makes a darn good jambalaya. I cut back on water when using shrimp.

Sure, go for it.
I sometimes add shrimp here to my normal chicken thighs, pork and smoked sausage jambalaya and is loved by a few people here in Abu Dhabi.

That’s the second rule! The first rule is no tomatoes! Ha!
Nah, nothing wrong with a box for a meal at home.

The box says you can add tomatos. I don't, but Zatarain's says you can.
