I've really gotten into baking lately

I've been baking white bread, yeast rolls, pizza crusts, banana bread and cinnamon rolls just about every weekend.

Most of the time, I will only taste a little bit of what I make, and the wife and kids will eat the rest.
I get the most enjoyment out of seeing whatever I'm making come out perfectly.

It must be an old man thing. Idk

Read this sometime. It'll give you some ideas. I tried some of his variations and have come to a different conclusion, but the research is ongoing, I just only do it around holidays.

I really enjoy baking, it was something I struggled with for a long time, but lots of repetition has gotten me to a point that I'm generally happy with what I make. Still haven't mastered laminated doughs, but will keep trying.

One thing that I have come to appreciate is how difficult it is to run a consistently good bakery. It takes an enormous amount of work to put out a consistent, high quality product. It's easy to see why most bakeries take lots of shortcuts.

I love to bake. I made a chocolate bday cake awhile back from scratch. Four layer round cake. That thing weighed at least 10-12 pounds. It was so freaking good. About to start making homemade sourdough.

I too do a lot of baking. In the last week I've baked 2 date/nut loaves, 2 banana/nut bread loaves and have an oregano/parmesan bread dough proofing to go in the oven in about 1 hr.

I buy my all-purpose flour by the 25 lb. bag from Costco and will easily go through a couple of them a year.

My wife is the baker, and a good one. I mainly cook savory stews and stuff like that, but I have tried baking a few simple things (don't want to step on her toes and I dare not touch her mixer.)

I have done the simple Irish Soda Bread and things like bread pudding and some savory pies. I did make some pecan pies recently. The first was not good -- mainly because I was using a Golden Eagle Syrup recipe designed for Alabama and I was in New Mexico at 5300 feet. I made the right adjustments and the second one was good.

I am interested in trying more bread baking.

Pour into greased pan
Bake at 425 degrees for 5 minutes
Lower temperature to 350 degrees but do not remove muffins
Bake for 17 minutes


It's a muffin recipe that I bake in a loaf pan. You can make it either way if you have a muffin pan.

Here's my go-to recipe for one loaf:

2 very ripe bananas
3/4 cup sugar
1/4 cup shortening
1 egg
1/2 tsp. baking soda
1/2 tsp. baking powder
2 cups all purpose flour + a little to dust your baking pan
1/2 cup sour cream
1 cup chopped pecans or walnuts

Put the bananas, sour cream, sugar, egg and shortening in a bowl and beat until well blended. Then add the flour, baking soda, baking powder and nuts. Mix well until well blended.

Lightly grease a loaf pan and lightly coat the pan with a very thin layer of flour so the bread releases easily when done.

Bake at 325 for 50 minutes-----use a toothpick inserted in the loaf in various places to make sure it is done. The toothpick should come out clean. If not, bake it in 2 minute intervals and check again.

When done, remove from the pan and place on a cooling rack to cool.

I’m 35 and love to bake! I especially love making various cheesecakes. I’ll do pumpkin rolls, pies, and cobblers. A good homemade pizza dough is great as well, but that’s the extent of the bread side. Would love to attempt some sourdough.

Here's a recipe for an herb/parmesan bread I baked today.

2 cups warm water
2 packs dry active yeast---.25 oz. each---1/2 oz. total
2 tbsp. sugar
2 tsp. salt
2 tbsp. melted butter
1/2 cup plus 1 tbsp. parmesan cheese
1 1/2 tbsp. dried organo
4 1/4 cups all-purpose flour

Sprinkle yeast into the warm water and make sure it is well mixed, then let sit as you put together the other ingredients.

In a large bowl, put the sugar, salt, butter, 1/2 cup cheese, oregano and 3 cups flour. Add the yeast and water mixture. Mix this until it is well blended and smooth----about 2 minutes.

Add the rest of the flour and beat it in until smooth. Cover and let rise in a warm spot for 45 minutes.

Grease and lightly flour a loaf pan and set the oven for 375 degrees. Beat down the dough, pour it into the pan and let it rise a bit more while the oven comes to heat. Sprinkle the last tablespoon of parmesan on top of the dough and bake for 55 minutes.

When done, the top of the loaf will be hard when tapped. Remove from the pan and put the loaf on a cooling rack.

I feel this way about tea cakes. My grandma made such simple ones that were so good but I have not been able to find a recipe that tastes the same.

Same. I bake and bring goodies to my pool team, trivia team and bar I go to. I rarely eat what I make. I just enjoy doing it. It’s a little therapeutic for me as well

It was super dense and super moist man! Normally don't care for that dense of a cake. But it was was stupid good.

I grew up on my grandmother's pound cake and no other pound cake tasted quite the same or as good to me. Her's had a unique tang to it.

Not long after she passed, my soon-to-be wife made a pound cake. She warned me that it probably wouldn't be any good because she had left the butter out, and it soured in the summer heat.

I loved it. It tasted like my grandmother's, who lived in south Florida, and who always left her butter out, and never turned on the one little window unit AC that she had.

I baked a turkey for Mother's Day and baked this bread on Monday. We've been eating turkey sandwiches for the past couple days and it's been great using that bread.
