I've joined the homemade sourdough starter craze - any tips?

Any tips or tricks with growing homemade sourdough starter? Should be getting the pack tomorrow afternoon from Amazon.

Check out Btrtigerfan's sourdough cinnamon rolls thread.

They're a quick set sourdough, but are delicious, and I'm not a sweets guy.

Meh, those things are great for beginners.

OP - just be consistent with feedings. Weigh the flour and water, don't use measuring cups. After the 3rd day or so you should atarta discarding down to match your flour and water input each day. Keep the ratio of remaining starter : flour : water 1:1:1.

Anyway, my 1 tip. Is don't forget about your starter in your AV closet for a month before coming back to it. After my starter got going, when i was feeding it once/week, i'd move the starter to my AV closet because it stayed a pretty constant 80-82 degrees. Well, i forgot about the starter for a month or 2 and it got pretty gross inside.

Initially, it took me awhile to get my starter going. I used some homebrew sour beer dregs as my yeast for my culture. I belive it took me about 3 weeks before i saw any activity in the starter. I really want to get back into making my own sourdough, but the initial feeding of a starter was a pain in the arse. I think it was twice/day for 2 weeks, before the feedings slowed down. What also prevents me from getting back into it, is St. Bruno here in BR is making sourdough almost identical to what i made, and probably better.

I should feed mine and bring it back to life.
I try to remember to feed it in a day or two.

I plan on keeping it in the kitchen near the window where it gets relatively warm. From my understanding, warmer temps require more frequent feeding. I'm cooking every day so I won't miss it.

Felt it was much easier to buy this kit than to buy a single mason jar. I do like how it has markers to keep track of things for me.

Nothing crazy, just pick a kitchen scale off of Amazon. Try to get something with at least a 1000 gram capacity and accurate to at least .1 gram.

This is a game changer ... I was able to have one delivered and it is super...
especially if you do not want to be regulated to everyday feeding

It is its own refrigerator and sits neatly on the countertop

I followed the perfectloaf's guide to making a starter.

I used a rubber band on a mason jar to track any growth. Once it got going good, i could easily rely on my starter doing it's thing. But the first 2 or 3 weeks were a pain in the arse, feeding it twice/day.

I am not going to dog you for buying a starter, but my advice is to keep it simple.

If you are not feeding everyday, you will have to refrigerate your starter. If you refrigerate it for more than a month, you will probably have to feed it multiple times to bring it back to full strength.

I need to get back on my SD game but I just don't seem to have the time for it anymore.

I think prefermented dough is a good alternative to SD and you don't have to keep a starter.

All this fancy stuff. My starter lives in a Mason jar in my fridge unless I'm autolyizing or freezing it. I freeze some into ice cubes and hold in freezer if I need to make more starter later.

I grew my original from flour and water. Then I have another I bought from Europe as dried flakes and woke up m
