I start the sourdough about two weeks in advance to get a good flavor.

Kent Rollins Quick Set Sourdough Recipe

I make the dough on the evening of Christmas eve and stay awake for the first rise.

Dangerously Addicting Sourdough Cinnamon Rolls.

Don't let this intimidate you. It's really easy. We have done this every Christmas morning for the past 4-5 years.

My Paprika Recipe Manager app wouldn't let me copy and paste, but it did have the links I got the recipes from.

For your starter- Rollins says its good for5-7 day. Do you just leave it on the counter for 2 weeks?
Do you feed it with more potato, sugar?

10-14 days. I just stir it everyday. The potato stays good that long. I only add to it if I use any of it for any reason. It makes plenty to do at least a double batch of the cinnamon rolls.

I'm glad you tried and enjoyed them. I made two batches. One for us, and one for the kid's friends down the street. There were very few left.
