Instant pot: should I buy one?

Okay, I'm about to drop $100 at WallyWorld on an Instant Pot ultra 6 qt....tell me why you like your Instant Pot & your favorite dish you make in it. (I'm buying it mostly to pressure cook meats, beans, and to make egg bites.)

That is pretty much the only thing I do with mine. It does a lot more, I just don't do it.

Only regret is I didn't get the 8 quart.

It is my favorite kitchen gadget. You should absolutely buy one.

My favorite thing I make in mine is beef & broccoli. The beef comes out so unbelievably tender. I also make a honey-garlic chicken that's pretty bomb (sometimes I use pork loin instead, also awesome). And mashed potatoes!

We have the one with Bluetooth, so we can control/monitor it from a different room. There are also apps that you can get that give you recipes and a lot of them are super creative and EASY.

if you cook a lot of beans, then yes.
i like to hover over a pot on the stove when i'm making a stew or red sauce/etc, but with beans its too easy to set and forget with the instant pot

also, its really great for oatmeal

Why the regrets on the slightly smaller version? I live in a 2-person household, so I'm not seeing the need for the 8. Or is it about dimensions rather than capacity? Tell me why you feel like you need the 8.

8 is $50 more than the 6 right now at WM. I can get the 6 immediately, while the 8 wouldn't get here until Friday.

You are good with the 6 qt.

I cook for more people. Hard for me to get 2 nights out of a batch of beans with my 6 quart.

It does the job though. With just 2 of you, stick with your plan.

I use mine to make a big batch of steel cut oats about once every 10 days and I used it last night to make lentil taco filling. It has a saute mode I used to saute onions and garlic before adding and pressure cooking the lentils. I also use it for red beans. There are a bunch of various recipes online but I haven't tried any of those.

I have done whole potatoes under pressure and they come out pretty darn good. You don't get the crispy crust like in the oven, but it is a quick way to get yourself a "baked" potato.

Nothing ever tastes quite as good as the stove top. I would only buy it if you live a fast paced life and don’t have time to cook. Otherwise you aren’t missing anything.

Same here, have a 6, it's fine.

It makes a great risotto. I've used it to make chicken vindaloo and green lentil curry. I've also used it for roast, pulled pork, beans, etc. I didn't use it that much initially (I've had it probably close to 4 years), but now I'm glad I have it.

I own an old school pressure cooker for the stovetop. It works great to make concentrated broths/stocks that are arguably way better than the open-simmered kind. Live a little, try a pressure cooker. And who doesn't like red beans in 20 minutes in a bloody hot south LA summer?

I live in New England, but this is still an excellent benefit. It can get really hot up here in the summer and most older homes don't have central air, so having something on the stove for hours and expecting the window units to be able to keep up is miserable.

6 qt is plenty. Cabbage 6-8 min. pork roast 20 min real time saver. Gave one to all family members for xmas. All of them are cooks and use it all of the time. Costco had the deluxe model at $79 last week.

I made some awesome kalua pork for the game Saturday night.

Put about 5 lbs of pork shoulder (cut into 4-5 pieces, seared, and stuffed with garlic) into the IP for 90 minutes. Seasoned with salt, pepper, a white onion, and about a cup of beef broth. Came out absolutely delicious.

Topped tortillas with grilled pineapple, red cabbage, green onions, teriyaki sauce, and sriracha.

Great stuff

I rarely use mine. Just never was all that impressed with the final product of the things I've made. Mac & cheese and pork carnitas are the only two things I've made that I really liked.

That said, in the 1 1/2 years I've had it, I've probably only used it a dozen or so times.

It takes a little bit of trial an error. The first time, I didn't like the red beans I made in it as much as on the stove. But then I discovered you can cook in the IP with the top off so I pressure cook the beans w/ approximate seasoning for 20-30 minutes and then take the top off and cook for another 15 minutes or so adding seasoning to taste and cooking off any extra liquid.

That's a great point.
Anyone have a favorite site for Instant Pot/pressure recipes? Upthread, Melissa Clark/NYT was cited. Who else has good stuff?
