re: I'm sure this has been asked before, but who makes the best boudin in Louisiana?

My favorite is Bubba's at the Mowata Store, on Hwy 13 between Eunice and Crowley.
I’d choose it for my last meal. It’s sublime. Would love to know wtf they do. I bet it’s simpler than what I’m thinking and just a situation where the sum is greater than the parts.
But it’s the best I’ve ever had. Complex, not overpowering, awesome.

Also, get the Chicken Cracklings.
sidebar:
the best chicken craklins are at Bosco's in Opelousas. I make no other claims about the rest of his products, but his chicken cracklins have the best rub on them that I"ve ever tasted.
And I've eaten a bunch of 'em.

for straight boudin I like Rays in Opelousas. nbody can touch billys pepperjack boudin balls though.

I can remember there was this joint Ray’s & Billy’s place in Opelousas, I think on 182, that sold both recipes. Poor Ray, I rarely ordered his boudin. Always Billy’s. If I got one link of each, I always needed to eat the Ray’s first, because the other way around would lead to severe disappointment during the second link.
billy bought out rays many years ago(1997) on the hwy 190 entrance to opelousas. They continued selling something called rays but it was nowhere near as good as the original rays. many years later ray opened back up on hwy 182 and the taste is like it used to be. rays was a very popular place before billy bought it. I know it was open at least about 40 years ago. Great move by billy he was able to buy out his biggest competitor in the area and also keep their customers because his prodct was also good quality. I think his boudin ball recipe is what really separated him from the rest of the pack.

exactly,
Billy bought out his competition and then discontinued the product (Rays boudin) a few years later. Unless you're 40+ yrs old from Opelousas/Sunset/St. Landry Parish or travel 182, not many younger people know about Rays boudin.

Very underrated, one of my favorites.

For me, Best Stop, Riverside, Eunice Superette, Kartchners, NuNu’s.
Seeing a lot of Juneau’s responses. I find it to be so greasy the last couple years and not what it once was. Billy’s has fallen off substantially to me too but coworkers like it and I eat it. It’s just inconsistent.

No offense but the regular red & smoked red from T-Jim's in Cottonport is much, much better.

yeah to be honest I would love to buy them out. The recipe is very good and I think the perfect spot to open a second store would be the lobdell exit off I-10. for a while one of the family members was running it and made it a little more spicy and it was killer, but they seemed to have reverted back to less heat. I would try and get a crust on the balls that they make more like billys. they havent tried to really innovate like everyone else, they seem fine with mostly selling links of boudin.
as for billy, I am interested to see what he does with the old store. That store has served a shitload of boudin out of it over the years. Rays was like what billy's/best stop/etc are now back in the 80's.

Thanks for the heads up guys. I really love Juneau's. That's my number one for now but I intend to go get them all and decide for myself.

Use to hear about Jerry Lee’s in central, but no mention of it here. Is it no bueno these days?

I didn’t think it compared well at all to good boudin from west of the river.
I’m being kind.

I second Market Basket on Nelson Road in Lake Chuck. They make the best and I have had it all over South Louisiana.

Jerry Lee's is not good. I understand people from the BR area supporting it, but stick to the hogshead cheese.
The best I've found in the BR area is Benoit's in Addis.

I wouldn't say it's best, but it is definitely a solid link.
For me the most underrated was Janise's in Sunset. It recently sold to Harp's and I'm not sure if the recipe is still the same, but I intend to find out.
