Thinking about gilling scallops for the first time tomorrow and am looking for tips or suggestions. How long should they be grilled and on how high a heat? I'd also like a cheap and easy sauce to top them. Thanks in advance!

Hundreds of recipes on the www. Make sure they’re fresh. Pat dry. Pinch of S&P. Drizzle EVOO in pan, set to High temp , sear scallops 2-3 minutes each side ... Garlic butter scallops

I think you'd have more success using a cast iron pan rather than the grill.

Or use the pan on the grill.

You definitely want to make sure they're dry, but EVOO is one of the worst oils to sear on high heat with. You want something with a high smoke point for searing like Ghee, Safflower Oil, or Coconut Oil.

Why would anyone take $20 a lb. scallops that taste great on their own with just a bit of seasoning and garlic/lemon butter slathered on them while they grill and mask that taste with bacon?

Don't get me wrong, I love bacon, but to wrap scallops with it is just wrong.

I have a small griddle to use on the grill for cooking a dish like this.

Yeah don’t stick directly in flame. Scallops arent hard. Butter, salt, pepper, maybe a dash of lemon juice.

Make sure you don't overcook! Someone said 2 to 3 minutes, but I feel like you couldn't go 60-90 seconds a side

Totally agree. The longer you cook they will have a chewy texture. I usually go 90 seconds a side on a med-high heat.

Is Ghee easy to find? Safflower?

Avocado Oil has about the highest smoke point of any oil

Agreed. I can't speak to the other oils mentioned but I use Avocado when doing high heat and for me there is a distinct lack of much flavor. I mean that as a good thing. If I use regular vegetable oil to sear a steak I can taste a little something after. I don't taste the avocado. Could be the other stuff I used burned.

When I use EVOO there is also a taste that I do like. But that is for lower heat sears and cooking for me.
