If I'm doing a Pastalaya for about 20...

Is 4lbs of pasta/bowties
3lbs of Chicken and
2lbs of Anduille good?

I may sneak in some pork temple meat and of course some tasso, but I'm more focused on the meat pasta ratio....

20 hungry men or 20 men, women and children? Either way it should make it but you might be scraping the pot if it’s all men.

Do 4 lbs of each meat and you should be good. That should make 20 solid bowls.

Edit: Or add 2-3 pounds of the temple meat like you mentioned and you’ll be good.

For pastalaya i use 2lbs of protein to 1lb of pasta.

You need about 4lbs of pasta to feed 20 men. I would use 8lbs of protein. Get s 3lb pack of pork steaks, cube it and add that to your recipe, you'll be fine.

Will give you about 50-60 cups of pastalaya. So 50 small bowls or 25 large portions.

5 gallon pot

Good rule of thumb-

For “average” eaters -
One pound rice/pasta for every six people.
2:1 ratio meat to rice.

Yall need to clarify “meat” and “protein”. Raw meat? Sausage? To me, “meat” is raw meat (pork or chicken) and sausage is in a category by itself.

If yall are cooking a 5 gallon pot, you’re using 4-5 pounds pasta and 5 pounds rice. You should be using 8-10 pounds of raw meat and 5 pounds of sausage.

Your rice, onions, and sausage should always equal the same amount. Raw meat is double that amount for smaller pots and you can cut back for larger pots.

I tweaked for awhile before landing on:
3lb pasta
4+lb pork (temple or cut up butt)
4+lb smoked sausage

Feeds ~25 mixed crowd with no other side items. You could argue that’s too much meat, but if you let people serve themselves, the bottom of the pot will look like a vegetarian dish.

That should get you what you're looking for with the ingredients that you mentioned.
