I suck at desserts but have to make one for a contest with my FiL next week...

I only pull out the mixer & flour at christmas so everything i make then is off-the-table since its not really 'beach' desserts.

i tried my hand at a 'key lime' inspired cheesecake earlier this week (used the no bake jello mix, added juice of 4 key limes and 8oz of cream cheese) and it was 'meh' at best.

help! i need a sure fire winner that's easy (we're going to be in destin) and delicious and will crush my competition.

Coconut Panna cotta topped with fresh berries or make a chocolate reduction.

Easy and it appears difficult to make.

no bake chocolate eclair dessert made with graham crackers and pudding is great in the summer heat

Awesome cake - Yea, I know, it's a stupid name. But I'm not telling my grandmother that.

Bake a German Chocolate Cake in 1 large pan, and let cool.
Use a wooden spoon to poke 1cm(ish) holes throughout.
Pour 1 can condensed milk on top, making sure it leaks into the holes.
Pour 1 jar caramel on top, making sure it leaks into the holes.
Top with whipped cream (in a tub, not that spray shite).
Top again with crushed Heath Bar.

Make sure not to calculate fat and calorie totals, and enjoy.

A few ideas, from easiest to hardest:
--coffee granita w/whipped cream. Make your favorite coffee, add sugar. Let it cool. Pour into a shallow pan, put in freezer for 1/2 hr (or until it starts to harden). Scrape w/fork or metal spatula to break it up, put back in freezer. Repeat every 20 mins until it is all fluffy and frozen. Scoop into a tall glass, making alternate layers w/whipped cream (real, not cool whip...but you can use the spray can). Finish w/cream on top, grate a little chocolate and a tiny sprinkle of cinnamon as a garnish. If you don't like coffee, you can do the same thing, only use pureed watermelon in place of the brewed, cooled coffee.
--French chocolate silk pie...recipe here: LINK but you can simplify by using a prefab graham cracker crust if you want.
--Tiramisu: you'll probably have to buy mascarpone and ladyfingers before you leave home, but everyone loves it. Easy, too.
--Chocolate mousse, garnished w/fresh strawberries/raspberries.... I like the versions with eggs only, no heavy cream. Here's my go-to: LINK

ETA: just saw you were looking for "beachy" desserts. One way to take good ol bread pudding in a beach direction is to use canned coconut milk in place of regular milk in your usual recipe...also mix in a handful of shredded coconut and some chopped fresh pineapple. Buy a jar of caramel sauce or dulce de leche to use as a topping.

Here's a real easy one that doesn't take much prep time and even a non-cook can make it come out good.

Peach Cobbler:

5-6 fresh peaches sliced and peeled
1 1/2 cups sugar (divided)
1 cup all purpose flour
1 tsp. baking powder
1/4 tsp. salt
1/2 cup melted butter
1/2 tsp. vanilla
1/2 cup milk
1/2 cup ice water


Use some butter to grease a 9 x 13 baking pan and line the bottom of it with the peach slices.

Combine 1/2 cup of sugar, flour, baking powder, salt, butter, vanilla and milk and stir until smooth then pour this over the peaches

Combine 1 cup of sugar and 1/4 cup of ice water and mix well to dissolve the sugar and pour this over the batter.

Bake for 1 hr. in a 350 degree oven. Serve hot, or wait until it cools and is easier to cut and remove from the pan. For a bit extra, you can drop a scoop of vanilla ice cream on top------I don't, but have seen it done.
