I’d smoke them and make a stock for a duck / oyster/ andouille gumbo.

You and me both. I did check out some videos and all of them were presented by Asian folk and to be honest, looked like shite with the exception of the sauce they finally wound up being cooked in. The sauce looked to be quite good.
I mean what's next-----chicken wing tips???

One of my favorite dish at dim sum is chicken feet. I’m assuming you can cook duck feet similarly

They don't look a whole lot different then a chicken wing, I'd bet deep fried they would be pretty good.

Cut at the joints and make a stock for gumbo.
