I may do them again for next weeks game but with Nunu's boudin instead of breakfast sausage.

They weren't as photogenic as yours but tasted great. Everyone here was pleased with them and will be adding them to their game day and party appetizer list.

Before I left to go to LSU Saturday morning, I left one at my neighbor's door with a note explaining what it was.

This morning he knocked on my door and told me that he couldn't describe how good it was. Then he said, "Man, that shite was gangsta!" Also that he and his wife were arguing over who got to eat the most of it.

I want to try this. I'm going to try with andouille or smoked sausage though.

Not crazy about breakfast sausage.

I'm going to do them as well... But then I thought how good pepper jelly is with cream cheese... Going to add pepper jelly either with cream cheese or om outside.. If someone has said this already sorry... Didn't read whole thread ...

If doing them in the oven, how long would one cook them for? Seems like an hour at 350 would be a little long for the bacon

also, one could totally turn this dish into a layered casserole. Bet that would be worthy

Maybe a pepper jelly dipping sauce with Sriracha?

if you blend the sriracha with cream cheese, then stuff the pepper with that, it comes out pretty good.

I tried making them that way last night.

I was thinking of mixing the pepper jelly with cream cheese... Or right before they are done putting pepper jelly on the outside... Or the dipping sauce idea sounds good... I actually thought of this at peppers pizza yesterday.. I ordered the stuffed red pepper app.. It was red pepper stuffed with cream cheese then breaded and fried... It was served with a chipotle raspberry dipping sauce.. They were delicious hmm.. Maybe using some red pepper for some of the eggs might be good as well........

Baked mine at 350 for 50 minutes, took them out and basted in Sweet Baby Rays and baked for 10 more minutes. Came out perfect IMO. Everyone there liked them and are planning on making them for their next get together.

That's the beauty of cooking...you get to experiment!

I've experimented with this, but have always come back to the original recipe.
