My wife loves caviar and wanted to get some for Christmas Eve dinner as a surprise. Is there an online resource to get a larger amount at a better price than local stores?

Probably want 6+ ounces.

Doesn't help you for Christmas Eve, but I know for a fact that Whole Foods puts it on a pretty damn good sale every New Years Eve

Check with them

It does not take a connoisseur to be able to tell the difference between slightly higher end caviar and bowfin

I use Paramount caviar. They are the purveyor for Le Bernardin. Their prices are in the middle of the range of online sellers. Quality and consistency are very high and they offer a range of different caviars and various price points.

I got my wife Petrossian last year for Christmas and I don't remember it being outrageous.

I do second the Whole Foods recommendation. We usually get a couple ounces for NYE from there. I think even regular price it's not terrible.

Damn. I could hook you up with a great lowkey spot in Nashville — probably the best in town tbh. I don’t have a clue about Chattanooga, however. Maybe their Whole Foods?

Here is a link to sturgeon caviar farmed in NC. My palate is not sophisticated enough to know whether it was gold or just good to me.

Cajun Caviar is very good. Commanders Palace used it at one point. Not sure if they still do. Very mild flavor. Not overly salty.

yes I like it a lot. And it’s sustainable if that matters to you (sturgeon are critically endangered and on the brink of extinction)
