I have a 100 qt pot but I always feel like I have too much water...but I don't want to have too little...

Is there a good number of quarts/gallons to use?

I have a 120 qt. I fill it just over half way. When I used to use a 100 qt I would do they same.

Put rinsed/clean crawfish in strainer basket, put in pot, fill pot with water until it covers crawfish. Pull strainer basket out. Mark line on pot for 1 sack or 2 sacks or whatever. Start boiling.

Adjust for accoutrements accordingly...

Enough to submerge all the crawfish, not so much that it overflows when the crawfish are submerged.

40 qts of water should be plenty for a 30lb sack if you have a normal or even more than normal amount of fixings.

You need to just cover the crawfish, so in my 100qt pot, a very heavy third full, but not 1/2 full.
My pot has developed a boil line from use.

This is what I do. When the time comes that you add the crawfish and you find it's not enough, just fill with the hose if necessary.

my friend, Larry (not his real name), just told me he uses 8 gallons for a sack, which would be just over 1/3 of the way up my pot...

I am going to try that to see how it goes...

Do this. And then take your paddle and insert it into the pot make sure it touches the bottom. Make a line for the watermark on the paddle - now you never have to guess.

This works really well with a. 120q pot because you can make different marks for 1 sack vs 2.

Edit for clarity: pull the crawfish out before you measure because the pot will be empty next time you fill it up. The crawfish will displace the water roughly the same every time you boil.

Exactly. I see people quite often overfill their pots with water, and then wonder why they added the “recommended” or “normal” amount of seasoning and the crawfish just weren’t soaking up the seasoning….well if you have a few more gallons of water in this batch than you did the last batch, your seasoning got much more dilluted. This method helps with seasoning control as much as anything IMO.

For 1 sack I go to the 5th ring on my basket, for 2 sacks I go to the 7th.

ETA; Just calculated it. 5TH ring is about 10 1/2 gallons and the 7th ring is a little over 17.

I have a 100qt pot and I fill it just over 1/3 for a 35ish pound sack. I find half is too much water.

About 3-4 holes (in the basket) from the top.
