My wife does this as well and drives me nuts. Same thing with Salmon. It's as if she is incapable of pronouncing silent L's.

I can't comment on that because I'm not from Louisiana.
But I get where the confusion comes from now and I'd argue the pronunciation of gumbo filé is not relevant here.
Filet is a cut of meat, which is fi-lay.

I suppose you are correct, strictly speaking, but it's a dialetical difference. Fee-lay for fish is what I was raised saying. It wasn't just some weird family quirk, it's all over. Just one of those weird regional things.
