How do you fry shrimp? And oysters?

I have a basic propane burner set up and some Louisiana fish fry.
Oil temp?

Oysters are easy and excellent:
Drain them, toss in corn flour or corn meal, seasoned to taste.
Heat oil to 360. Drop in the oysters in small batches. Pull and drain on a wire rack when they are floating and golden...it won't take but 2 or 3 minutes per batch.

Only thing I can add is to not crowd the pot to lower the temperature too much when adding the seafood.

I prefer an electric 1.25 gal. fryer over cast iron pot. I like the heat source in the oil rather than below the pot.
I use a thermometer instead of relying on electric fryer controls.
I use corn flower and corn meal mix for oysters, small batches at 45 to 60 seconds at 370-375. I like light or soft fried oysters.
I use fish fry and fry at 370-375 until crust get golden brown.

I also like a 50/50 mix of cornmeal and corn flour for oysters.

No egg/milk/hot sauce dip first before dredging?
I’ve seen people do that for shrimp

I fry seafood at 360-370.
Shrimp and fish, I normally egg wash, batter in fish fry, and fry. When they float, I give them another minute and pull them out.
Oysters go straight into the fish fry (no eggwash). When they float, they are done - very important.

Seasoned AP flour. Dredge in egg/milk mixture that is seasoned also.
I make sure to never mix flour fried foods with cornmeal fried. Fish and shrimp/oysters fried in separate pots.

First you need to figure out what batter you prefer on each one. Everybody is different. I want corn meal on my fish, corn flour on my oysters and AP flour and pancake batter on my shrimp. Those are my preferences.
Shrimp and oysters get an egg wash, fish doesn't. Oil temp should at least 350 and preferably 360-65. All of them will cook in 2 minutes or less depending on how big your fish filets are.
Tips? I fry my fish last and shrimp first because the cornmeal will hang out in the grease and get on everything else, which I don't want.
Butterfly and devein your shrimp. A perfectly fried oyster is crispy on the outside with a warm moist center, imo.

You dont need to do anything fancy.
Drop them in the dry batter, coat them, and then into the grease.
Dont over crowd the pot, keep your oil temp at temp.
Fry oysters about 45-60 seconds, shrimp about 90-120 seconds.
Drain them on a wire rack, sprinkle with a little creole seasoning.

Spahrs been in business 50 years. They wet batter with Louisana Hot Sauce, Dry Batter with Indian Girl Cream Meal (yellow corn flour), fry them, drain and sprinkle with salt.

I’m not a fan of Spahrs catfish, very bland with no seasoning. I do not like the way they cook it. I don't want hot sauced flavor fried fish. And for what it’s worth, Golden Corral has been in business for 48 years and Chili’s 46 years.
