Also, Houston’s makes its Bloody Mary mix from scratch. it’s likely that they didn’t have any on hand since it wasn’t a brunch or lunch shift.

They have a cocktail that they call the Kickstart. It's their version and it's served up. It's probably the most comped item they have. Even the servers will try and steer you away from ordering it.

You could have started by looking at their menu which indicates they do not serve a Bloody Mary: LINK
Looking at their cocktail list indicates that Houston’s may not be the kind of restaurant that relies on mixers. You want ZingZang, go buy it. You can’t even order a Coors or Bud Light there.

It's easy to shite on this restaurant for some reason, but I've been there many times and have always had quality food.
The French Dip is outstanding, among other things. The food is always consistent.
Just because its not a hipster joint run by a dude with shaggy hair and a porn stache, NOLA food snobs will shite on it.

It’s a pretty specific drink. If they don’t have tomato juice or some kind of mix they don’t have it.

Most places with full bars don't ONLY serve the specific drinks they list on the menu.
A bloody mary is not necessarily dependent on having a "mixer." It would seem it's not hard to keep a few little cans of tomato or V8 juice behind the bar (they probably last forever) and mix up one with other ingredients typically at hand for the rare bird that comes to Houstons and wants a bloody mary.
I also agree that it's not something I would see as a "deal killer" either, if they told me they didn't have the available ingredients. It's just a bit odd to me.
On second glance, I see they have one on their menu with a note of "weekends only," which makes the whole deal even odder that they wouldn't be able to accommodate a customer wanting one during the week.
