Hot Sausage Poboy

What's your favorite hot sausage for a poboy? Is it links or patties?
I had been thinking about a hot sausage patty poboy lately so the other day I picked up a container of Patton's Hot Beef Patties and fried some up last night. I can't say that these are really "sausage" but they're pretty good.
Not very spicy when you eat it but the heartburn struck about an hour later.

Love a good sausage poboy.
Pop's in Lafayette has a crawfish boil sausage poboy that is among my favorite they make.

I like both the Pattons patties and links. But I only like the links when they're a day old.

Patties by a wide margin of preference over links, with the possible exception of the one they do at Gus's where they griddle small coins cut from links until they are nice and crisp.
For patties I pretty much use Patton's as my base standard. Always happy if a place uses Patton's - and if they don't then the question becomes - is it better or worse than Patton's?
Pretty sure Gene's either makes or procures their own and that is a personal favorite.

I used to love that poboy.

I much prefer patties. Arabi Diner and Tick Tock Cafe on Causeway were go-to drunk spots for a good hot sausage patty poboy.

When I do want a sausage link Po-Boy I prefer to have it grilled with a Lil char on it.

According to them, they make it themselves. After Katrina, some buddies and I went one night and were told they didn't have the hot sausage back yet and we were like"but everybody else has hot sausage, why don't you?" ... they politely informed us they didn't use Patton's, they made their own and the machine they used wasn't back online yet.
I used to love it back in the day when you could buy Vaucresson's patties. Vaucresson's > Gene's > Patton's, but Patton's is the standard that all are judged by, and what most hot sausage po-boys in New Orleans are made of. I heard Danny & Clyde's had switched to some sausage i never heard of, and that it was hot trash.
I must also note that a bright red somewhat spicy hot link on a hot dog bun is NOT a "hot sausage po-boy."

Thanks for the confirmation on Gene's.
BTW - Vaucresson's is supposed to be retailing their sausage again - just not sure if patties will be returning along with the links. Here's a link.
