Detroit style coney chili is the best I’ve ever tasted and beef heart is the key. Here’s a recipe from meathead at amazingribs.

Chisesi’s is the closest one you can get in NOLA.

I have always subscribed to the two types of chili theory. Chili as a condiment means no beans. Chili as a side dish, or the main course, you need beans. This recipe is awesome, thanks!

This may sound like heresy but you can get a really fine grain to your ground beef if you cook it in water instead of browning it first. You’d sauté your onions and garlic, add tomato paste to cook it a little bit, stir in your other spices to let them bloom, mix in the water, then add the ground beef. Then you can use a slotted spatula or spoon to mash up the ground beef as it cooks. Let the sauce reduce until it gets to the consistency you’re looking for.
Exactly what I do when I want a diner-style hot dog chili. Actually found the recipe on YouTube of this white-haired granny who talks about it being such and such's diner's chili.

Believe it or not, Birmingham is a big hot dog city, mainly from the Greeks that immigrated here. When they make their chili they add tomato sauce before browning the meat. It kind of makes it a smoother consistency. I'll have to your recipe now.

I believe it. Similar in Georgia… Columbus, Macon, Marietta and smaller towns like Cordele and Americus all have their famous spots.

I had chili dogs every Halloween since I was a wee lad. My Dad started doing it one year and I have looked forward to a Halloween chili dog ever since. Have not yet tried to make hot dog chili from scratch. Will be doing so this year thanks to this thread.

That is very cool. So glad I posted it then. Hope it brings back good memories.

Even though it’s really a sauce, I ate a small bowl full the last batch I made and I liked it that way too.
Try putting it on pasta sometime and top it with diced onions and shredded cheddar cheese. Add hot sauce to taste. That works for southern chili as well as Cincinnati chili. (For Cincinnati chili that would be called a 4-way.) The Spaghetti Warehouse chain serves a spaghetti with beer chili sauce which is basically that. Use a lot of cheese and cut bites with your fork like lasagna, don’t twirl it on your fork like spaghetti.

Never thought of using for that but I know it wood be good. Will try one of these days for sure.

Fun fact, hot dog chili was invented by a Greek. So was pineapple pizza.
So was Cincinnati chili.

First thing I’m doing when you invite me over…
Yes, I’ll take a cold beer, then ask if I can taste the Chile
Then get a big soup spoon, fill it up overflowing and add one of those garlic toes on top

Cincinnati chili is such a unique taste.
I absolutely love it, probably because I first experienced it at Reds' games with beer, and associated it with that. Nothing at all like what people usually think of as "chili".
My kids have always called it "Christmas chili" because of all the cinnamon.

Lol. Would love that.
I think I’m gonna add 8 cloves next time because I did the exact same thing.

There’s a famous spaghetti house in Huntington, WV called Jim’s. They make their spaghetti sauce in a similar fashion - add raw ground beef into the tomato sauce, smooth it out, and then cook. Comes out incredibly fine. They also throw in chili powder.
Here’s a recipe for Jim’s spaghetti sauce
