...of my surprise tasting day yesterday.

What was supposed to be a regular homebrew IPA day turned into a very nice treat of some very sought after DIPA's. I brought "A Giant Hop for Mankind" to sip while we brewed our IPA, but was informed that my brew partner had picked up some Ghost and Opus this past week at Parish. Awesome! Then, I was informed by my brew partner's brother that he had a Ghost that he was saving from 11/2015 batch. We decided that yesterday was as good of a day as any. I would rank them...

1. 11/2015 Ghost - absolutely perfect. Malty, just bitter enough but very smooth and refined, incredible aroma, not harsh at all in the finish and just right amount of fruit. It was so hoppy but still so easy to drink. This was possibly the best beer I've ever tried.

2. Ghost on tap at brewery right now - I thought they were very different. This was considerably more harsh and bitter and not quite as much fruit. It was still very very good, just different. It wasn't nearly as refined.

3. Opus - plenty already said on Opus. Just a delicious straight up IPA.

4. Another Hop for Mankind - This DIPA was good/very good as well. It had somewhat of a burnt malt/overly roasted character that a lot of Bayou Teche beers seem to have. It was overpowered by the Ghost as we tried this one back to back. At first, we didn't think it had enough aroma or hop flavor in general, but the more it sat the better it got. After revisiting it about 15 mins later, we changed our minds. It has a good amount of hop aroma and has a very nice hop finish without being harsh. I would certainly buy this beer again and I want to try it alone, without having any Ghost in me.

We also bottled an APA batch from about 5 weeks ago. This one is hopped with Simcoe/Centennial/Citra and was dry hopped again at 1 week with more Simcoe. We missed our gravity by a decent margin so not overly confident that this will be a very solid beer. We did, however, nail the gravity on the IPA batch that we did yesterday so that beer should be very good. We shall see in about 5 weeks.

Interesting that you thought the older Ghost was better.

I have one bottle from each of the last 4 batches... I think when the next one comes out I'll do a 5-batch vertical and see how it has changed on my palate.

I didn't care for this one at all. A malty muddled mess.

This probably won't end well.

I'm glad you enjoyed the beers, that's what it's all about.

Have you had one that old? I would have thought it would have lost a lot due to being so old, but it didn't. A/B'ed with a fresh batch of Ghost it still retained the essence of the beer except slightly mellowed, which I thought was unique for a DIPA that would be better fresh. So, in a non-sarcastic non-dickhead way, it was a treat. Im assuming you'd turn one down if offered right?

*I did drink one recently that I had left from the 11/15 batch and it was actually still pretty good although I know it shouldn't have been

its a combo of things. i imagine most beer drinkers opened the thread thinking it was going to be something different. maybe a lineup of different hard to get beers(heady, russian river, treehouse, etc).

dnm3003 posts 4 beers that the beer thread is absolutely littered with every single day saying people will be jealous. let alone the ghost bottle is from last year.

seems like a troll

I honestly can't tell if you are trolling or you are serious in this thread, but i'll give you a tip to improve your homebrew if you'd like.

I'm not sure if you bottled half off of that carboy or that's just how much you brewed, but if you did brew about 2-3 gallons of beer, i'd highly suggest you get a 3 gallon carboy. That much head space in your carboy will lead to some potential oxidation of your beer.

All seriousness, why would you want to age a double IPA?
