Pour chili over bowl of elbow noodles. Cover chili with shredded cheddar cheese.

I can’t believe what I am reading. Does nobody else eat chili with rice?

Yep-- Shanghai Jimmy's Texas Chili Rice - I use the recipe printed many many years ago in the Dallas History forum - I'm not even sure if the place is still open since Jimmy died in 1990.

I love chili Fritos with grated cheddar, raw onions, and either a dollop of sour cream or some diced avocado. If I don’t have Fritos, then I’m happy with saltines on the side. When I’m low carbing, Parmesan crisps.

I do a smoked, over the top chili on my egg and prefer it over rice. Has lots of bell peppers so it works well with rice, or not.
Also like to eat it using tostitos scoops as a spoon.

This made for some interesting reading. What a cool story Jimmy had. Interesting life to say the least.

ETA: American cheese, sour cream, saltine crackers, and some homemade hot sauce

Shredded cheddar cheese, sliced jalapenos, hot sauce, and regular fritos (not chili flavor or scoops).

Though, back in the day when these were still around, add this to the dish as well. These were goat.

Always over rice with some sour cream, shredded cheese and green onions. Leftovers I like to use to make chili dogs.

If I have saltines I will use them but I don’t usually go out of my way to buy them just for chili.
