We are looking to smoke our own turkey and hams, roast our own beef, etc., then slice for sandwiches.

If you’re talking about a deli slicer, I’ve looked at some used ones at a restaurant supply store and they’re pretty pricey. Like $500 and up.

Search facebook and craigslist. Don't skimp but if you act fast you can get a good used one (like Berkel) for 250 or 300.

i need one of these for my homemade bacon. cutting that shite by hand is a pain.

I think thats the one I been seeing pop up a bunch. I want to get one as well but not sure what one yet. Id really like one that could do like 1" + slices as well if I wanted say thick cut pork chops or something but not sure if that's possible.

That would be nice too.

I like the one in the photo above. There are some for under 300 but don't look nearly as nice.

My wife bought me a slicer years ago and it was less than ideal. I'm the kitchen guru and she, in her heart, thought she was doing me a favor getting the home meat slicer she bought.

It did work fairly well for a while, but would overheat if using it to slice large portions of product, had a small blade of only around 6 inches that had me cutting roasts, hams and other meats in half to be able to use the machine. The sled travel was also short, so that too limited the size of the hunks of meat or other things being cut.

It lasted about a year and I tossed it out and resorted back to doing it by hand with my knives that I keep razor sharp and that has been how I've sliced things for ages now.

It would be nice to have a "good" slicer, but I'm not going to pay $500+ for one just to have when I need it.

Check EBay for a used Hobart

Or buy new if price isn’t an issue

I've had this one for several years, not a Hobart but works very well. I could imagine using it for light commecial duty. I use it for homemade bacon, jerky, and slicing bulk deli meat. It would probably fit in a large cabinet but lives on my counter.

Edit: make sure to get a good pair of cut gloves. The blade is heavy, slippery, and extremely sharp, taking this thing apart to clean it is always scary.

That's the problem I've run into with mine. Sometimes we get whole slabs of bacon from Conecuh and I can't slice them with the slicer.

Just cut the slabs in half, or a size that fits the sled. They still cook up the same, just smaller pieces is all.

Like already mentioned in a prior post, I do all my slicing by hand with my knives and I keep them razor sharp for such use. I brine, smoke and cut up all my own bacon, and do so with a long carving knife.

I just make sure the bacon is as cold as I can get it, short of being partially frozen and it cuts much easier.

I took a quick look at Hobart on the webstrant website and they go from like 5-9000. But then there are 2 of them (EDGE) that are 12" for 1500 and 13" for 2k. Are either of those lower models worth a shite? I am not spending 5k+ but I could think about 1500 or a used version of one of those.

Does anyone slice raw meat on their slicers? Like boneless pork chops and the likes.

I slice raw beef and pork for jerky. The one I linked above will go paper thin on raw cuts if you want it to. Also used it on cabbage and onions a few times. They're a pain to clean. I thought I would use it alot more, glad I didn't shell out the bucks for a Hobart.

This is why I haven't got one yet. There have been plenty times I wish I had one but is it really enough to justify the $ and the storage. I have been wanting to do more of my own deli meats/bacon stuff but still not sure.

worked in a meat market with a few deli slicers as a kid. the bigger slicers didn't seem nearly as hard to clean as the smaller one i got from Cabela's. I ended up giving that one away.
