Hog Head Cheese

I have tried it from a few different places but I can't get past the texture. Who has the best Hog Head Cheese and how would you eat it?

my grandma's sister's is the only one i've tried and it's delicious. Are you referring to the aspic or the meat, etc?

Jerry Lee's is the best i had. never tried it homemade.

It used to be Bourgeois, but I stopped at a small meat market in Golden Meadow on the main 4 lane road early this year and tried theirs and prefer it.

I love HHC and I eat it by itself, cut into little cubes.
But if you don't like the texture, stir some into a bowl of grits. You'll be a believer.

just dont do like my mom, she got the bright idea to warm it on bread in the micro, came back and couldnt understand where it went at first until she realized what she did lol. what a mess that was.
its most likely too far away for most readers here but Don's country store LINK / is a small local super market but the guys there make great hog head cheese. not sure of the times they make it but it sells out quickly but if you want to be sure call ahead to get them to put some aside for you.
just FYI - the mild has a "little" bite to it and the hot is actually "hot" so its not for yankee taste buds. most yankees (or people who dont add much pepper to food) will think the mild version is pepper, just sayin.
they also smoke their own sausage

Eat it thin sliced on white bunny bread with manda Cajun turkey, pepper jack cheese, honey mustard, and relish sealed, toasted, and pressed in a sandwich press.

Bourgeois Meat Market in Thibodaux. Slice it up and put on top of grits.
