High quality smoked bacon recs

Looking for really good quality applewood or hickory or oak smoked bacon for the holidays. What recs do y’all have TIA

Pickup a whole pork belly from Costco and google EQ bacon calculator. I didn’t realize how easy it was until I made my first batch a couple of months ago. I currently have 2 slabs (20#’s) of pork belly curing now.

Fathers Country Hams has excellent bacon. Be forewarned that it is heavily smoked and pretty salty. Benton’s is good too if you want something slightly tamer.

Allan Benton’s is probably the smokiest I’ve ever had.
I do not enjoy it as a breakfast bacon. Too smoky. For me, it’s strictly a cooking bacon for vegetables.

It's the secret ingredient in my baked beans for this reason. Really great with limas/white beans.
It's not a breakfast bacon. Good on a burger, or wrapped around a steak.

The key to Benton’s and other heavily cured bacon is to not overcook it. You don’t want it crispy, because it gets hard. Smokiness level is a matter of preference… I happen to like it on its own. Had some this morning.

Zingerman’s Bacon of the Month Club is one of my favorite holiday gifts to give and is a great (but a tad expensive) way to try lots of different delicious bacons.
