We've been a few times, and will go back. I like having the option of grilled tenders, and they're especially tasty on the Magoo's Favorite Salad. They're also sodium bombs.
Mine's similar to the OP's, except I omit the boiled eggs and add finely chopped celery. The pickles I use are homemade sweet pickles, the ones made with lime.

My hometown in North Mississippi had a restaurant that served that kind of potato salad, with the addition of a bit of mustard. It was so tasty.

That does help a bit, but still...

For chicken salad, I've begun using my mom's old-fashioned meat grinder and run the chicken, celery, and pickles through it.

I do, too. It seems like quite a few of the people on this board seem to be afraid of crunch in their salads, though. I tried Calvin's chicken salad one time, expecting something sublime after all the rave reviews on here, but found it was more akin to chicken paste.

Thank you so very much for sharing the info. My old River Road is falling apart, because it had a busy life with my aunt before it came to me. I'm delighted to be able to access it digitally now.
I always use breasts for this, and just guesstimate how many thighs they'd equal.

Crockpot Balsamic Chicken

1 teaspoon garlic powder
1 teaspoon dried basil
1/2 teaspoon salt
1/2 teaspoon pepper
2 teaspoons dried minced onion
4 garlic cloves, minced
1 tablespoon extra virgin olive oil
1/2 cup balsamic vinegar
8 boneless, skinless chicken thighs or breasts
sprinkle of fresh chopped parsley

Combine the first five dry spices in a small bowl and spread over chicken on both sides. Set aside.

Pour olive oil and garlic on the bottom of the crock pot. Place chicken on top. Pour balsamic vinegar over the chicken.

Cover and cook on high for 4 hours. Sprinkle with fresh parsley on top to serve.

I think McComb's Catfish One is the best catfish in this part of the state. Edited to add that it's on Hwy. 51, just north of Walmart, in a metal building with a porch attached. It's almost in Dollar General's parking lot.
