The best sausage I've found that is readily available in DFW is Holmes pecan smoked.
I'm open to other brands, but this is solid.

If I’m forced to buy smoked sausage from HEB…it’s Prasek’s only.
Everything else is trash.

Not all HEB's offer the same brands. The law of foods is that if it tastes good to you, it's good.
I'm not aware of any TX based sausages that 'fit' LA dishes. But I wouldn't deem them trash. Just don’t use them in LA dishes.
HEB's Premium lines are good. Opa's Jalapeño Cheddar is very good. Kiolbassa's stuff is solid. And I agree with offshore man that Prasek's is among the better TX sausages.

Louisiana native who has lived n TX for decades. I think it is legit. Use the Bayou Boil dry seasoning and Bayou Boil liquid boil. It is now my go to every time for crawfish and shrimp.

Does HEB not sell boil products made in Louisiana?
They sell Louisiana/ Tonys Seafood boiling products. I also found Tony Chachere's smoked sausage at the HEB by my house.

Houston baws or traveling thru, Prasek’s has a store/smokehouse on I10 in Sealy. Tons more selection and prepared/hot foods too.

Very nice store. It's on the east bound side of I-10.

100/100 would rather stop there than at Buc-ee’s in Katy.

Now? They’ve been doing this for well over 15 years.

All I can say is that Opas green chile sausage is the tits, picked up 20 of these over the summer. Most sausage in NM aren't very good.

I think both do very well in Texas.
The Best Stop in Katy, has Smoked Sausage, Andouille and Tasso. Along with a number of other items. Boudin is first class in Texas.
Best Stop

That is not a fair fight. Praseks is great. I have switched to the HEB kountry boys sausage (from Brenham) for red beans and Jambalaya. But I think that's more a function of wanting something different from Prasek. It's the only really good sausage I've found available here.
