Have You Used Canned Potatoes?

I was watching a video and the home cook used a can of sliced potatoes which she fried in a skillet. They didn't get particularly brown, but she didn't cook them very long.
I've never even thought of using canned potatoes. I don't know that I notice them in the stores when I'm on that canned food aisle.
I glanced at some recipes using them and it make me curious. I'd never used potato flakes either until I saw Jacques Pepin make a simple potato and leek soup with them. I've now made that soup about 4 times and it's delicious. Tastes just like pureed potatoes.

Growing up, Mom would use canned new potatoes with canned green beans, but we ate lots of canned vegetables, so this was not a shocking thing. I used them in my young adult years, too, but never tried to roast them or crisp them up in any way. They’re fine for what they are.

Haven't used canned potatoes since I was in high school. I wonder how they would do if you drained the liquid, sliced them in half, and crisped them up in an air fryer?

She drained and dried them with paper towels, but again, I think she could have cooked them longer and not so many at one time. The skillet was pretty crowded.
I know I've had canned sweet potatoes/yams at some points in time and they were fine except stringy on occasion. I've never cooked with canned, though.
I've probably had canned white potatoes and not noticed it. There's a local bbq place here and I'm convinced they use canned to make the potato salad which isn't very good IMO. However, I think it's on them rather than the potatoes. If they're only partially cooked, I'm thinking they don't cook them before using them. The texture is just off.
I may need to experiment. I'd love to have them work out because it would be convenient and I throw out more potatoes than I'd like that go bad before I use them.

I’ve used them quite a bit in the past. Two cans of the sliced new potatoes are just the right amount to make au gratin potatoes in a 9x14 dish. A can of whole new potatoes and a can of carrots are just right for a slow cooked roast. I’ve also just added butter and parsley, but they lack the earthy flavor that fresh potatoes have. So to answer the question, yes they are in my pantry, but mostly for quick meals. Fresh is superior.

Why would anyone want to use canned potatoes to begin with. It's not like they are hard to find or expensive to buy.

On occasion, I want some potatoes, but either don't have them or they have perished. Might want to keep a can or two on hand just in case if they are edible and apparently, they are.

I do them for breakfast. Through them in with some bacon grease, onion and Tony’s and fry them up till golden brown.

I use them on shish kabobs. Raw potato takes too long to cook and the rest of the vegetables/chicken/steak are cooked before the potato. I find this is the only use I have for them. I usually salt and pepper them and add a little lemon juice before cooking.

mom used canned potatoes for vegetable beef soup. that with a bunch of other canned veggies + V8 + cubed stew meat.
still crave it every once in awhile when it gets cold out.

Maybe smash them and roast with Parmesan, garlic butter etc etc
I usually have potatoes around but would be convenient to have a can that you knew would turn out something good in a pinch.

Same here. If they work doctored up, then I'd keep a can or two in the pantry.

My late SIL would sauté the canned sliced potatoes with a can of mixed veggies seasoned with Cavendar's Greek seasoning.

When I was a kid, mom regularly used canned whole potatoes as a side for a beef chop. She would brown them very well in a skillet with butter. They came out crunchy almost like they were deep fried.
I loved them, but I haven't had canned potatoes in decades.

I’ve never heard of anyone putting potatoes on kebabs. I just use meat, peppers, onions, and sometimes mushrooms. If you’re concerned about cooking times then you can always put an item on a separate skewer and start it sooner if varying the size won’t work. Also, with potatoes, you can zap them in the microwave for a bit to par-cook them first. That’s what I do when I make home fries. Nuking them for a minute or two (depending on size) before dicing them and throwing them in a pan with butter really speeds up the process.
I can’t imagine ever having a need for canned potatoes or that they would provide any convenience. Potatoes are cheap, always available, and easy to use. I don’t know if I’ve ever even seen canned potatoes in the store. I definitely don’t know anyone who’s ever cooked with them.
