Yes it's really good. Use Boar's Head garlic bologna add extra garlic. Plenty of recipes online.

My buddy owns a BBQ place here in Alabama. He smokes a bologna log whole. Slices it about an inch thick and sautés it in butter to order and serves on white bread. It’s fricking amazing.

So I went to PT school with a girl whose dad owned a bbq restaurant and they had a spot in the Left Field Lounge at Dudy Noble in Starkville. The way he would do it is he would lay a half chub on his grill. Erect, flat side down, scoring and saucing the bottom of it. He’d let the sauce on the bottom caramelize and cut off the bottom inch or so and pass it off to anyone standing around the grill. Then he’d repeat the process. Maybe it was just the atmosphere, but that’s the best way I’ve ever enjoyed bologna.
That being said, I’ve never cooked it in a way that I’ve enjoyed it as much as I did those days at Dudy Noble.

Had it a a BBQ joint outside of Tulsa. Smoked, thick cut, then fried a bit and put on toast. Fantastic

It’s a novelty people on the bbq competition circuit began doing for fun as a joke. I’ve done it a couple of times for parties.
Is it worth it? If you’re looking for a good meal, not really. But if you want to have fun with it, sure, go for it. Just know that it was never meant to be smoked for “a good meal”.

Growing up we’d have family get togethers and my uncle would typically smoke one. I enjoy them.
Why would anyone do it as a joke? What would be funny about it?

It’s on the menu at two BBQ joints in TX that I’ve eaten at. I guess they see it as a moneymaker rather than a joke.

It’s not smoked but the fried baloney sandwich at Roberts is one of my favorite meals in Nashville.
