I bought Conecuh once. I tasted it first and tossed it. I thought it was pretty bad and greasy.

Conecuh Cajun is pretty good with a different flavor than the regular. Savoies has zero smoked flavor. Richard’s is pretty good. I have been having Teet’s shipped. Excellent smoked flavor in gumbo and jambalaya

Love the Bourque’s Homemade made in a store. I always chuckle.

Conecuh is a heavy sage, breakfast sausage flavor profile from Alabama. Certainly not a first choice for gumbo.

Manda is awesome fried in a cast iron pot and excellent for red beans. Savoies and Verons are good too. All good Louisiana local companies.

Richards is owned by an out of state investment firm, I’m not a fan.

For a gumbo, if I’m buying sausage in a grocery, I enjoy the Manda andouille. It is more coarse than the sausage. Flavor is great except that it’s not a heavy smoke.

But you know, all of these companies are in business, so someone likes them. We all don’t have to agree on “the best”.

Conecuh is a good sausage, to me better as a side for breakfast, omelete, etc.

It browns better than Savoie's, last time I got Savoie's it was all falling apart.

but yes, its greasy AF.

im on the side of Manda sucks.

I would get Best Stop if available, only their tasso is available locally, which is a must for red beans, etc.

Awesome stuff, but in a gumbo it is too smoked and overpowers the taste IMO. That's why I use Bourque's, it has some smoke but not enough to overpower the gumbo. I use Rod's for grilling w/ BBQ and in red / white beans where I don't mind the smoke flavor. It is also good for a smothered sausage rice and gravy dish as well.

I prefer The Best Stop sausage as well. Regular smoked and andouille.
