Gumbo makes me feel awful - is it the type of sausage I’m using?

Whenever I make gumbo - and it’s damn good gumbo - I feel absolutely awful after eating it. I’ll even wake up the next day feeling swollen, bloated, and queasy. I eat a normal sized bowl with rice and a dollop of potato salad. I might have a bit more, but nothing outrageous in terms of portion sizes.

My recipe is pretty standard:

1 cup oil
1 cup flour

2 onions
2 bell peppers
4 stalks celery
6 garlic cloves

Tony Chacherie’s for seasoning
3 bay leaves

2 lbs conecuh hickory smoked sausage

2 small-sized rotisserie chickens, deboned and deskinned

3 quarts of chicken stock

I make the roux dark. I also slow grill the sausage to render fat before slicing.

There’s no way y’all feel like arse after eating gumbo, right? It’s one of my favorite foods, and I’m always reminded when I make it why I don’t make it very often.

You could try making a simple chicken soup with the same ingredients sans the roux to see if that's what causing you to feel that way.

If you are using store-bought stock and rotisserie chickens, it's likely bloating due to sodium intake.

Make your own stock. Roast up some boneless, skinless chicken thighs, and season gumbo to taste.

Also it could be the oil you use. Some folks have stomach issues when it comes to neutral oils.

Also, while I do believe the negativity towards it has become way too much than it deserves these days, some people are either born or develop a serious body reaction to gluten. How does eating a bunch of bread make you feel?

Someone mentioned cooking a chicken soup and seeing how you feel after. Might not be a bad idea. If you feel great, then you've got rice, flour and the sausage as the possibility.

We don’t have many good options for andouille. Publix used to carry Savoie’s but I haven’t been able to find it lately.

It’s Kitchen Basics stock and store-bought rotisseries. Definitely a lot of sodium.

The potato salad was store-bought as well.

I think he was just joking about Conecuh being terrible.

Your issue is likely coming from the flour or the oil. My grandmother thinks the amount of roux “we young generations” use is insane.

Almost mentioned that too. Lately I've been trying to dial in the right ratio for a small batch of seafood gumbo (3 quarts of stock) so same amount of broth as OP's recipe.

I tend to like more roux in a C&S gumbo but not a huge amount more.

I only use a little over 1/4 cup of finished roux for 3 quarts. I add a little more water as the base cooks to keep it at same level.

Not sure what 1 cup of flour and oil yields but it's more than 1 cup of finished roux. OP's recipe is 4 times what I use for my seafood gumbo.

It's very fatty. Probably the greasiest sausage I've ever encountered. I don't like it at all in gumbos, or pots of anything for that matter. It's alright grilled or split and cooked in a skillet.

It could be anything. The roux would be my first guess as to why your stomach would feel bad, but I'm not sure about swollen and bloated. If you think it's the sausage, simply eat some that's not in the gumbo and see if you feel bad.


But, you're using Alabama sausage in your gumbo, so maybe it is the sausage!!!

IMO is you’ve got a sodium problem.

Tony’s has a shite load, there’s a reduced sodium version available.
If it’s store bought chicken stock it’s got a shite load also. As with the Tony’s there’s reduced sodium available. Or make your own.
Sausage is loaded with sodium.
And the rotisserie chicken also has a ton, it’s what keeps it moist.

Cut back on sodium somewhere and I guarantee you’ll be feeling better.

It's the potato salad. Potato salad does not belong in gumbo and should be served on the side.

Also, use your own smoked chicken and get a better quality sausage (non smoked).

Not saying it's not the potato salad, but what difference to his intestinal tract would it make if it's sitting in the bowl or on the side of the bowl?

That's my guess for all the reasons you state and the fact that he feels bloated. I don't like the sausage he used either, but I don't know that it's the problem.

First off, I’d recommend not using that garbage period. But absolutely no matter what DO NOT use the salt free version. For some reason they think to get rid of the salt and instead put brown sugar.
