Roll a Owen's style sausage in cracked black pepper and smoke it away from the flame until internal temp gets up to 160. Allow to cool and then slice thin (electric knife works well) and serve on crackers, or crumbled up in eggs, grits, etc.

Every now and then, I like to buy 1 pound ground pork and mix different seasonings/flavors for fun. Make my own sausage to try. Then shape it into tubes and grill. Sausage with no casing.

simple recipe that is awesome ... Lebanese Kofta kabobs with hummus, pita bread / naan, and tzatziki sauce
I use 1 lb. lamb and 1 lb. ground sirloin
season with Lebanese / Greek seasonings (salt, cumin, coriander, black pepper, red pepper flakes, cinnamon, minced garlic, yellow onion grated, chopped fresh Italian parsley, chopped fresh mint)
mix together and insert sausage kabob onto skewer - grill
serve with pita bread, naan, hummus, tzatziki , cilantro lime rice, tabouli salad
can also be made in the oven if you don't want to grill

My favorite part of getting deer sausage is hoping for the extra that didn't fit into the casing. Just grill the whole patty.

I do it pretty often. I make my own hot, Italian, green onion that I will take out the casing, form patties and grill them with no problem.
Like others have said, pork tends to shrink a bit more than other meats, so make the patties accordingly.

I've done it many times. You do get some smoky taste, but mainly there's no pan to clean up.

Used cook sausage patties while camping using one of those flip grills over the fire. It was good.
