Why not go Sams or Costco and get a big arse filet for 25 bucks? Cut into whatever size you want and freeze?

meh, its Atlantic salmon which is not nearly as flavorful as pacific northwest.

Off topic a bit, but one of my neighbors just got back from spending a month in Alaska with her dad and she came back to N.O. with a load of fresh, wild caught salmon and dropped a nice filet on me a few days ago.

They caught, cleaned, vacuum sealed and froze most of it and made salmon jerky with some of it. The jerky is fantastic and the filet is still in my freezer waiting to be cooked or cold smoked.

I get the frozen Atlantic salmon from Sam’s. I like the size of the pieces and the price is right.

I don’t care for the leathery texture of wild caught, much prefer the farmed Atlantic salmon myself (and Costco has the best in my opinion ) but I have seen the frozen pacific wild caught in rouses and occasionally at Costco

Has that been previously frozen or does Sam's get it fresh and sell it fresh?

Buy frozen. Unless you are within 2 hours of whatever seafood you are eating buy it frozen. Even the stuff they thaw out and lay on ice can be loaded up with chemicals from ice, the seafood display or chemicals they spray on it to make it look fresh and not smell.

I honestly don't eat much of it because it's not my favorite.

But when I do eat it, it's the choicest meat you'll ever see and I eat it within 2 days of catching it.

136 fillets last year so I am a little tired of it myself. I have plenty of lake trout, pike, and can catch a couple grayling pretty much anytime I want for a large portion of the year. I am not doing as much salmon this year.

I can imagine. I give half of mine away and smoke a lot and give as xmas gifts. I still have halibut, ling cod, and catfish. I don't give away white meat

I much prefer fresh fish to frozen but 9 times out of 10 fresh salmon from the store is going to smell like a Hong Kong whore house
