How do you bread your shrimp? Also do you soak them first.

I soak mine in beer, red pepper and hot sauce. Then dust them in seasoned flour before frying. Gives them a light batter so you can taste the shrimp.

Beer mixed in fry mix until batter consistency and into the oil.

Soak in condensed milk. Then dredge in seasoned flour. Fry at 360 in small batches. Drain on a wire rack.

I was wondering that. I use cornmeal for fish but would a flour dredge be better?

I like Zatarains Fish Fry (corn flour). I don't like regular cornmeal, though.

I use Mr Petes fish fry before that I used Slap Ya Mamma.

Egg Wash
Dip in fish fry
Fry till they float
Drain on a wire rack
Little hit if lemon if i have it
Eat

I gave my flip-n-fry to my mother in law. I use a big bowl (probably 12" diameter) and have a 3 pounds of shrimp battered ready to fry in no time. I didn't like mine, but some people do.

Cuts down on mess. Seems like when i use bowls, i cover the entire counter with batter and fry powder. Saw some good ole baw with one at a tailgate one time. Baw fried food while smoking cigarettes for hours. i was intruiged. got one a few xmas' ago. I enjoy it, keeps my hands clean.

I use the Louisiana brand shrimp batter

Difference between it and normal fish fry, is you add water to the flour and mix.

I put a little red pepper garlic and salt directly on the shrimp and dust with flour. Then dip them in a egg milk wash then Bread them in a mixture of mostly plain zatarins with a little flour, cornstarch and cornmeal with some Leon's seasoing (like Tony's but has more garlic and parsley in it)

I like flour and I hate cornmeal. You can load up the batter with seasoning but I really like to sprinkle just salt and pepper on top when they are hot out the oil (hot enough to dissolve it). In my mind you get more out if it.

And tempura, love doing them in tempura batter.

I use the technique from Mike Anderson's cook book. Never had a complaint.

Dip in cold water.
Dip in seasoned flour. (He cook book doesn't use seasoned flour, but I do.)
Quick dip in cold water.
Back in flour and rub with fingers to produce dense flaky bits. This is key for good crunch that lasts after removing from oil.
Fry at 375 F. Doesn't take long.

Egg wash makes too thick of a batter. Don't care for corn meal on shrimp.

I soak them in:

Egg wash
Tony's

Then dredge them in white flour and drop about a teaspoon of corn starch, seasoned with more Tony's and Garlic Powder.

I'll then fry one and taste and adjust seasoning as necessary by adding salt after they come out the fryer.

Best tasting Shrimp I have ever had.
