Sure don't but I would love to know Tony'S seafood recipe for fried shrimp..

I'm a flour guy for shrimp, cornmeal for fish for whatever reason

Me too. For shrimp I do an egg wash with La Cajun Seasoning, garlic powder and La Hot Sauce. For the batter I use equal parts AP flour and pancake batter.

Kept wondering why Mother-In-Law's shrimp were so good. One day she let me in on her secret...pancake batter. Been using it ever since.

rinse em off, toss em in Zatarain's seasoned fish fry while still wet.

I don't like a lot of breading.

If you like a lighter batter I throw beignet mix in with the flour. Almost tempura like depending on how much beignet mix you use

Fresh shrimp, squirt of yella mustard and sprinkle of Cajun seasoning blend

Drop is seasoned flour and meal. About 5 parts flour to 1 part meal, I like a tiny bit of crunch. Cook at 350 for me to set a better crust, seems if I cook higher than that they get mushy crust as they sit.

Place on wire rack and into warm oven till all are done

If you like a crispy and fluffy crust. Mix 1 egg, 1 tablespoon of baking powder, 1/4 oz of vinegar. Soak shrimp in that mix and then drop in bowl of all purpose flower. Promise best you'll ever have.
