Fried catfish

Curious to different methods.
Who here soaks the filets in milk prior to seasoning?
Who coats with mustard before shaking in fish fry?
Who uses egg wash?
I usually coat with mustard and a little tabasco, but haven't tried soaking in milk

I've been experimenting.
Catfish in:
cold water > corn meal
buttermilk > corn meal
egg whites > corn meal
The crust is a little thicker as you go down that list, but it's not super significant.

Soak in mustard and hot sauce thinned with some water. Shake in Louisiana fish fry. Fry in 375F frying blend. Drain on a wire rack or a bed of thin sliced Vidalia onions.

I mix a wet dredge using egg, sour cream and Dijon mustard and when mixed it is a fairly thick liquid that coats the fish easily.
I then mix white and yellow corn meal, add salt, garlic powder, cayenne and black pepper to my preferred taste.
Go from the wet dredge to the coating and into the 350 degree oil to fry. Don't cook too long as it dries out the fish. I do tend to slice my catfish in strips after I filet them and the pieces are kept in the 2 inch wide by the width of the filet for frying.

2 eggs, a little milk, a couple shots of hot sauce and a squirt of yellow mustard. Mix that all together and drop your fish in it. Shake off the excess and batter it with corn flour, fry it at 350 till it floats, drain it on a wire rack and sprinkle it with some creole seasoning.

i season them
i mustard them
when it comes to catfish, i like only cornmeal. no fish fry. i save that for bass and white perch
also.......i kinda like my catfish thin and crispy.

Usually mustard dredge to batter or straight into the batter.
For batter I like Louisiana Brand in blue bag. Don’t have to add anything. The “New Orleans style” has a touch of lemon and is pretty good too.

FWIW....I've tried most everything at one tome or the other. Mostly it's a soak in cold salty water...drain...season.....coat in cream meal...fry in hot p-nut oil.
