If you were to pick a smoker for smoking meats only (not grilling or searing)...would you pick a WSM or Primo?

WSM will win on capacity and smoke quality.

Stick burner would be better.

No advice on the primo but just got a WSM and it’s been great!! Really like it so far. Only used a Weber Kettle prior. Both put out great smoked meats.

I have a 18” and 14” WSM.
Once you know where to set your vents it’s pretty much set it and forget it.
Can easily get a 12-14 hr smoke at 225F.

With my heater meter, i ran my primo at 225 for over 36 hours. dont know why you would need it but it was that efficient.

I wouldnt mind getting a bullet to play with but at WSM prince i wont buy one. If i see the walmart knockoff on sale ill get it.

I've never needed a temp controller. My 22 is really easy to set up using the minion method and I can put a brisket on at night and go to sleep and my smoker stays between 235 and 250 the whole night without a temp controller.

I am going to get slammed for this comment but:

I think WSM puts out much better smoked meats than any ceramic grill(BGE, Primo). WSM burns fuel the entire cook because of the thin steel. Have to add wood, lump, whatever. Constant heat and clean smoke moving past the food. Same concept as a stick burner.

The fact that you can cook in a Primo for 36 hours without adding fuel just sounds like you aren't really burning anything. Sure at first you have a fire going. The thickness of the cooker retains all that heat and you are cooking with radiant heat.

My BIL has both a BGE and WSM. I have a WSM and BackWoods.

When he cooks on his BGE all of the vents are practically shut. I have never seen him add lump or wood chunks and he's done cooks for 20 hours and there is still a lot of lump not burned up.

Slam away.

Because it's basically an outdoor oven. Your WSM comments are dead on.

Nailed it. Sometimes a cooker can be way too efficient and I feel that is what happens inside a ceramic cooker. I love the fact my WSM burns through some coals and wood chunks.
