100% with you on gumbo.
Not sure if it counts because it hasn't been cooked yet but any meat that marinates overnight is usually pretty awesome the next day when cooked correctly.

They're called "Calabrian Pittas" and I watched Mary Ann Espozito make one on TV years ago.

My mom use to make something called coconut refrigerator cake that was unbelievable and got better with time.

Yeah, that name isn't exactly descriptive of the sandwich.
Calabria is the southern tip of Italy, right near Sicily, so I guess it make sense that the cuisine is similar. And that may explain why she just called it essentially "Calabrian Bread". I've heard that the muffuletta sandwich actually takes its name from the bread, which was also called muffuletta.
I'd like to know more, too. She must be considered an expert - I wonder why she didn't explain it better.

I've always thought a baked ham was better after a couple of days in the fridge.
