First attempt at reverse sear

22 oz sirloin, marinated in olive oil, salt, garlic powder and sriracha. In the air fryer until 130, then seared in cast iron for about 1 minute per side. It’s not perfect, but not bad for my first try.

Baw, I know good and damn well I-Tal-Ian dressin’ don’t produce no good sear.

It was a sirloin, so I decided on a little different flavor. It was pretty damn good, too.

I should have clarified- it’s an air fryer/oven/broiler/toaster. I used the oven setting on 200 until it hit 130. It’s 75 damn degrees outside- I’m not turning on my big oven

Yep- I only get up to fire up the toaster over to reverse sear a steak. Otherwise, I’m eating ding dongs dipped in melted Blue Bell. GTFO- I didn’t use a fricking microwave.

I find it difficult to get a good seat with a steak that’s wet.

Don’t worry about those guys gumbo. The steak looks like you hit the done-ness right on the head. If you enjoyed the flavor, then it is a success.

It looks good to me! IWEI.

Pro tip for sirloins: make a good complimentary compound butter and put a big chunk of the butter on top of the sirloin while you rest it. It is a game changer for leaner cuts of steak.

Your only mistake is saying air fryer instead of something like "countertop convection oven." Otherwise, you're right, why fire up the big oven when you have a new fangeled countertop oven that heats up three times as fast and puts out 1/4 of the heat in your house. For a first time reverse sear, it looks good. IWEI. Maybe post a pic of the oven with the steak next time. You know....for those guys.

I don’t know. People on Reddit always bitch about their oven heating their home and I don’t get it either. We southerners have the AC on anytime it’s warm and the oven makes no difference. I guess some folks making those comments live in areas where AC isn’t a thing as much? I don’t know. Can’t relate.
