I always eat it. As long as it's good good boudin, like mentioned earlier in this thread. Anything that is spelled "Boudain," stay away from it.

The boudain from “Best Stop” in Scott Louisiana has a crisp boudain casing and is fairly easy to eat. Some of the best in my opinion ????

Oil the casing and coat in salt and pepper…bake at 350 until it just starts to bust…cool, cut…heaven.
