I once barbecued a pork loin using a recipe I got from the Weber Grill Cook Book. It called for making a sandwich with mayonnaise on the finished product. Mayonnaise on pork sounded disgusting to me but since the recipe was from Weber I tried it. The sandwich was delicious.
I once did a butt on my Primo. Another couple were coming up for a visit. He brought some tomatoes from his garden. He asked for mayo and made a sandwich of sliced pork, mayo, and tomato on white bread with a good bit of pepper. At first I was slightly offended that he was turning my pulled pork BBQ into a ham sandwich, but then I tried it. It was wonderful. Mayo and black pepper are key ingredients in any white BBQ sauce.

Like what?
Never mind. I did a search. I will never buy Duke's mayonnaise again.

My favorite is House of Nash Eats:
Alabama White BBQ Sauce is a tangy, creamy twist on traditional barbecue sauce recipe. It's delicious on grilled chicken, pulled pork, fish, burgers, and lots more! This recipe is perfect for 4 large chicken breasts, but you may want to double the recipe if you are grilling for a crowd!

I don't understand the appeal, unless it's something people grew up with.
I had it (not Duke's) once at a well regarded BBQ place in Charleston. We got there late so they were out of a lot of stuff, but they had the baby backs with white sauce.
Horrible. Neither me nor my wife nor my son found it "good" in any way, shape or fashion.
I don't think I've ever left ribs on a plate in my life, other than this time.

A well regarded BBQ spot put white sauce on their ribs?
I mean if you just dislike mayo, I can understand not liking the sauce and I can perfectly understand having a preference of a different type of sauce, but what exactly do you find bad about it? It is a fairly common flavor profile for sauces served with chicken.

Saw's here in Bham has a pretty solid white sauce too, not that it is anything vastly different from the others already mentioned. I get their chicken thighs all the time, they are fantastic.
Put it on their spicy and regular sweet tea fried chicken sandwich too. Both solid options for some of their non-bbq fare.

In Charleston no less.
(Yes, I know SC has great BBQ. It was more of a commentary on a place serving white sauce in the wrong state, on the wrong meat)

As I said in my post, we got there late and they were out of their normal good stuff, but they still had that. So we tried it, limited options see? And it sucked.

This thread got me to make white sauce tonight.
Smoked some chicken thighs, bone in skin on.
Cup mayo, bout half that white vinegar, couple big spoonfuls horseradish (from a jar), couple spoonfuls of jarred sliced jalapeños chopped up real fine, bit of that jalapeño juice, kosher salt, tablespoon or so bbq rub(this was my blend), couple glugs of steen’s cane syrup. Whisk well to combine.
Baptized those smoked thighs in the sauce prior to service. Served with cheesy green rice and store bought chopped salad.
Fine meal.

Well, if you're using the white sauce on anything other than chicken, you're doing it wrong. Some enjoy it on other things, but the sauce was specifically made for chicken.
Yep. I feel the same way. White sauce goes on chicken not pork.

frick all that. I grew up in Birmingham and never even heard of big bob Gibsons until pitmasters aired on TV. Theres a joint in cahaba heights with a white sauce that also sucks. People acting like white sauce on chicken is a widespread alabama thing are as stupid as people putting tomatoes in gumbo.

It’s definitely become much of a “thing” in the last 20 years or so. However, chicken with white bbq sauce was a very popular dish at the Cypress Inn in Tuscaloosa since at least the 80s. That was my introduction to it. As noted above, not a fan.

I’m a traditionalist from Central Mississippi when it comes to BBQ’d chicken. White sauce isn’t my thing, so I’ll leave that to those who enjoy it.
