Now when I do ka-bobs I like the outside really charred but the inside medium-rare.
Gotta get the fire hot and tend it, don't go inside to watch TV.

If I was with someone who ordered well done, and the chef refused to cook it that way, I'd never go back to that restaurant.

Cook it the way they want it. Your job and livelihood rely on keeping customers happy. Not being a snobbish prick. (Not to you, to said chef.)

Wife orders well done AND uses Ketchup. It drives me insane that I essentially waste $30.00 on her meal She gets it from her parents though. Her father accidentally cooked a steak medium and the fam was embarassed that I did not tell them my steak was still pink in the center. I've suggested that next time we go to a nice steakhouse, we'll just pick up some Chicken McNuggets for her on the way there.

Sure, you can also wait to cook the other steaks until last

This is how I do it at home. You don't take steaks off the grill in order of doneness; you put them on the grill in that order. Then you take them all off at the same time. You obviously have to know your grill for it to work out right.

fwiw my '13 day aged steak' i only cooked to rare on the grill.

i've not eaten any steak above rare/medium rare in the last 10 years and i eat 5-6 ribeyes a week and i'm not dead yet.

On a wood/charcoal grill when I am asked to ruin a piece of beef, I invert a cake pan over it. Bottome is grilling and the rest is essentially oven roasting at the same time. Actually produces a moist well done steak. But I still want to kill the person anyway, as that shows no respect for the cow.

Same. When I have to make a well done steak for someone, I buy a cheaper and lower-quality steak.

I would never pay $30 for my SO's well done steak. She can go to Ryan's or Lone Star for that.

I took the SO to a nice steakhouse for her birthday and she ordered the ribeye medium rare. That's when I knew I had a good one.

I agree with whoever said the chef shouldn't refuse (simply because they shouldn't be refusing business) but as her husband, you should be like "Bitch, order some pasta!"

well done steaks are not for the feint of heart, the steaks raw blood is less gross than what happens to a well well well in a restaurant kitchen, ill leave it at that

not about how the steak is cooked but on a similar note: my buddy's in-laws took him to a high-end steakhouse. when the steaks arrived (i don't know how he ordered it cooked) he requested steak sauce. the waiter refused to bring him any, and commenced to explain how condiments weren't necessary and would only ruin the steak. my buddy was pissed and refused to go back to that restaurant.

he got pissed at me when i told him i agreed with the waiter...

I order it well done. Usually the Black and Bleu.

But I substitute velveeta for bleu cheese.

Ketchup on the side.

point being, a well well well gets treated with very little respect and is usually the oldest piece of meat sitting around that needs to be gotten rid of.

I whole-heartedly agree with the waiter, but he should have kindly said "We do not carry steak sauce" rather than ridicule the man. I HATE when people frick up steaks by overcooking or using condiments, but as a business, you have to respect each and every customer that comes through the door. Saying they don't have sauce would have been much better than making him feel like shite for using it.

Yup. For a well done steak, the cook will reach for the oldest and brownest steak, reserving the freshest and nicest looking ones for rare/midrare.
