I whole-heartedly agree with the waiter, but he should have kindly said "We do not carry steak sauce" rather than ridicule the man. I HATE when people frick up steaks by overcooking or using condiments, but as a business, you have to respect each and every customer that comes through the door. Saying they don't have sauce would have been much better than making him feel like shite for using it.

Well said. I think that making suggestions is certainly part of their job, but a waiter needs to be diplomatic. Nothing worse than some pretentious waiter telling someone what they should or shouldn't be doing. In fact, I think that kind of pretentiousness is what keeps many people going to chains and afraid to experience new and different things. Just my $0.02.

And on the avatar. I almost forget what I was gonna say.

Medium rare to medium is the perfect zone for me. Anything above that is much too dry, and well done is

My grandmother loves almost any kind of meat to be well-done. When my grandpa used to bbq, he'd have to set a side of the grill off just for my grandma's food because she likes it all burnt. She says "the char adds flavor" I don't care if it's a rib eye or a piece of sausage, that is GROSS. We used to ridicule her about it while we enjoyed our lesser-cooked food
She cooked me a steak one day and it was well done. It was like chewing a hockey puck. I needed ketchup to stomach it

My girlfriend HATED steak when we first met for this exact reason. It's all she knew, and she thought it was how you were supposed to eat steak. Of course I quickly converted her once she got her mind wrapped around the fact that eating rare beef wasn't dangerous, and after I finally convinced her to taste my meat.

I hate "char" on any BBQ to be honest. I'm exactly the same, mostly mediunm rare for me.

I've also told this lie before, but I did offer them a nice bordelaise instead.

less gross than what happens to a well well well in a restaurant kitchen

i take it that's kitchen slang for well done? as in, "well, well, well...what have we here?" right before mischief ensues?

I don't use steak sauce, but I've never understood how this doesn't "ruin" a steak just as much.

It can - but it can also kind of a redeem a terrible one. So it's at least nice to know they have a bottle in the pantry.

Are you kidding? 'Burnt ends' are the best parts.

Some of the most well reviewed BBQ restaurants sell more burnt ends sandwiches than just about anything else.

I almost said in my post, "well I guess the difference in a steak sauce and a bordelaise would be that at least the bordelaise is homemade."

exactly. i can sort of understand if you dont like the taste of some char, but good BBQ has some char on the outside and is tender on the inside.

char isnt mutually exclusive with burnt or overcooked insides

No, because you will have a thick black crust and burn it up before it's cooked to well done, and if you throw a thick piece of meat in the oven it will take too long so most just throw it in the deep fryer. It's a slap in the face to a nice steak to do that to it, but hell, unless you have a half hour to an hour to finish a steak, and your friends/family don't mind waiting, then you have to expedite it as effeciently as you can, so into the oil it goes.

Place I used to work would nuke em in the microwave after a couple of minutes on the grill.

because it isn't the way it's suppose to be eaten. It seems like a California thing always trying to do something different for the worst reasons.

My sister refuses to eat anything other than well done.

The last time I had the whole family over for dinner, I decided to grill steaks. I told everyone that they would all be either rare or medium rare. She refused to eat it. I refused to ruin a good steak. So I threw some frozen chicken tenders in the oven for her like I would a 12 year old.

I'll only take rare or medium rare with steaks. It tastes better and it doesn't harm you. Anything more than medium rare is ruining a perfectly good steak. Steak sauce is also an insult to the chef.

Not so much mischief, just not giving a damn about the meat at that point. More along the lines of, well well well look what we have here.

That's just your opinion. Everybody has different opinions about how things 'should' be eaten.

If people want well done steak, so what? Doesn't bother me in the least.

Some people like nuts and raisins in their chicken salad....so what?
