Does anyone have a good recipe for smothered pork chops?

I've been wanting to make them but have never attempted before. I Googled but I want them to not suck so I thought I would reach out to poeple who actually have ties to the South and not just the Food Network.

Season Pork Chops
Sear Pork Chops
Add an onion and cook until soft
Add chops back into pan with some water or stock
Simmer covered until chops are tender
Season gravy and add cornstarch slurry to thicken(if needed)
Serve over rice

My family loves pork chops with a mushroom cream sauce.
I brown the chops and remove them. Then, I saute finely chopped onion and sliced mushrooms in butter or bacon drippings, add a clove or two of minced garlic until fragrant, then I add enough flour to make a thick roux and deglaze with white wine or sherry. I then add heavy cream or whole milk (depending on what I have on hand) until it is gravy consistency. Add salt and pepper to taste. Lastly, I put the chops back in and simmer, covered until they cook through. That usually takes about 10 minutes for thinner chops; 15 for thicker chops. My family likes it with peas. When I have frozen peas on hand I toss in a cup or so at the end until the thaw. If you decide to do that, just make your original gravy thinker, because the chops and peas release some water into the sauce.

"I've done this with chicken and liver as well. Very tasty and worth the wait."
Ingredients
4 center cut pork chops (1-inch thick)
2 tsp seasoning salt
1 tsp black pepper
1/3 cup flour
1/3 cup vegetable oil
2 onions, sliced
Procedure
1. Season pork chops with seasoning salt and pepper, coat completely with flour. Heat oil in heavy skillet. Add pork chops and brown on each side (about 3 minutes per side). Remove and set aside. Add sliced onions to the pan drippings and cook for 1 minute. Add remaining flour continue to stir until onions and flour begin to brown. Add 2 cups of water and bring to a boil, stir until incorporated and return pork chops to the gravy, cover skillet, reduce heat and simmer for 60 minutes until gravy is thick and pork chops are tender.

I always cook the recipe that Stadium Rat posted with a few modifications. Specifically I use chicken stock in lieu of water and I add some fresh chopped garlic in there. It comes out really good. I have a good picture of the finished product but don’t know how to post pictures.

The Antler's downtown had a delicious pork chop with rice and gravy lunch..
I mentioned Antler's as a lunch suggestion and got machine gunned down voted a couple months ago..
You miss it most when you don't have it.

I used your recipe last night, except added celery and mushrooms and a tablespoon of dijon mustard. Came out really good.
