I think the use of a roux, braising the meats and slow cooking are factors making it more of a stew than a soup. As far as why its under soup on a menu, where else are they going to put it?

I kind of break them down like this. Even if they are all the same or too similar, I can imagine someone saying "this soup is more like a [insert any of the others]" and I'd know what they meant.

Grapes are often served in a bowl.

When one asks for chowder or bisque, do they say "I'd like a bowl of chowder soup/bisque soup?" both of those are def in the soup category.
